Sumatran Chicken, Pasta Medley And Pumpkin Soup by Chef Zakir

Ingredients for Pumpkin Soup:

  • Oil  2-3 tbsp
  • Onion Chopped  1
  • Garlic chopped  2-3 cloves
  • Pumpkin  1/2 kg
  • Chicken stock  1 1/2 -2 glasses
  • Orange juice  1/2 cup
  • Thyme  1/2 tsp
  • Milk  1/2 cup
  • Salt  to taste
  • Black pepper powder  1/4 tsp
  • Bread slices  2

Method:

  1. First, heat oil in pan, add chopped onions and chopped garlic and cook for 1 to 2 minutes.
  2. When they both becomes soft, add small chopped pumpkin and fry for 3 to 4 minutes.
  3. Now add chicken stock in this pan, cover it and cook on low flame.
  4. After 15 to 20 minutes, when pumpkin is tendered, then blend this mixture in blender.
  5. When mixture is blended well, put again in pan.
  6. Then add orange juice, thyme, salt, chopped black pepper and milk and cook more  for 8 to 10 minutes so that soup becomes thick.
  7. When the soup becomes thick, take out and serve with dry bread.

Ingredients for Sumatran Chicken:

  • Chicken breast  2
  • Oil  3-4 tbsp
  • Coconut milk  1 cup
  • Flat noodles  1/2 packet
  • Bean sprout  1/2 cup
  • Boiled eggs  2
  • Bean curd sliced  2
  • Fresh cream  2 tbsp
  • Leek  1
  • Celery stick  1
  • Salt  to taste
  • Black pepper powder  1/4 tsp

Method:

  1. First, heat oil in karahi pan, add ginger garlic paste and chicken breast fry until color of chicken changes.
  2. Then add turmeric, salt, chopped black pepper, coconut milk, leek and celery stick and cook for 2 to 3 minutes.
  3. After that, add boiled noodles, bean sprout, fry bean curd, chopped green coriander, chopped green onion and fresh red chilies and mix for 2 to 3 minutes.
  4. In end, add lemon juice, fresh cream, chopped boiled eggs add onion, mix it and serve with boiled rice or saute vegetable.

Ingredients for Pasta Medley:

  • Twist pasta boiled  1/2 packet
  • Celery stick  1
  • Chicken breast  2
  • Pistachio chopped  25 gm
  • Garlic  2-3 cloves
  • Carrot  1
  • Crushed black pepper  1 tsp
  • Fruit vinegar  1 tbsp
  • Cream cheese  3 tbsp
  • Oil  3-4 tbsp
  • Mayonnaise  3-4 tbsp
  • Salt  to taste

Method:

  1. First, heat oil in karahi pan and fry chopped garlic. When its color comes, add julian chicken breast and fry until golden.
  2. Then add chopped pistachio, cream cheese, celery stick and fruit vinegar.
  3. Cook for 2 to 3 minutes, after that, add julian carrot, salt, chopped black pepper and mayonnaise.
  4. When all ingredients are mixed well, add boiled pasta, mix it again and serve hot.
