Ingredients for Besani Roti:
Gram flour 2 cups
Wheat flour 1 cup
Cumin 2 tsp
Pomegranate seeds 2 tsp
Whole coriander 2 tsp
Salt 1 tsp
Crushed red chili 1 tsp
Onion 1
Mint 1/2 bunches
Yeast 1 tbsp
Oil 4 tbsp
Curry leaves 6
Green chilies 4
Butter 2 tbsp
Method:
Crush cumin, pomegranate seed, whole coriander and crushed red chili.
Now cut onion, green chilies and chopped mint separate.
Add flour, wheat, yeast, salt, chopped red chili, chopped onion and green masala in one pot, knead in lukewarm water and leave it for rise.
Then make portions, make thick naan, keep in oven proof tray and leave for a while.
Now keep in preheated oven on 150 degrees C for 10 minutes.
Then take out from oven and serve by pasting butter.
Ingredients for Aamchoor Gosht:
1 cup khatai
750 grams mutton
1/2 cup oil
4 onions
15 almonds
2 tbsp melon seeds
Salt as required
1 tbsp ginger paste
2 tbsp garlic paste
1/4 tsp turmeric
2 tsp red chilli powder
5 green chillies
1 cup water
1/2 cup yogurt
15 raisins
1 tsp all spice powder
1 pinch saffron
Method:
First, heat oil in pan and fry onions until brown.
Now blend almonds and melon seeds with some water in blender and keep separate.
Then put fried onions, salt, ginger paste and garlic paste and fry for 1 minute.
Now add turmeric, red chili powder, green chilies and 1 cup water, mix it, cover it and cook for 20 to 25 minutes.
Then put pistachio paste and khatai and mix it.
Now add yogurt, raisin, garam masala and saffron, mix it and cook until mutton tenders.
In end, serve hot.
Ingredients for Kali Mirch Chicken:
1 kg chicken
2 onions
2 tsp crushed ginger
2 tsp garlic
3-4 green chilies
1 tomato
1/2 tsp turmeric
1 tbsp coriander powder
1 tsp fennel seeds
2 tsp crushed black pepper
1 tsp all spice powder
Coriander leaves for garnishing
Salt to taste
2 tbsp oil
Method:
Heat oil in one pan and saute onion.
Now put green chilies, chopped ginger garlic and chopped ginger in it and saute for 2 minutes.
Then put chicken and cool for 4 to 5 minutes.
Now put turmeric, chopped coriander, chopped fennel, red chili powder, and salt and mix it nicely.
Then keep flame low, cover it and cook for 5 minutes.
Now remove cover of pan, add tomato, and cook until oil separates.
Then cover pan and cook for 4 to 5 minutes. Now put water, and cook more for 5 minutes until gravy is made.
In end, put all spice powder and sprinkle green coriander and serve.
