Lamb Ribs And Afghani Salad by Chef Mehboob

Ingredients for Lamb Ribs:

  • Lamb ribs  1 kg
  • Black pepper powder  to taste
  • Salt  1 tsp
  • Onion  02
  • Garlic  2 tbsp
  • Red chili  1 -1/2 tbsp
  • Cumin  1 tbsp
  • Coriander powder  1 tbsp
  • Sesame oil  3 tbsp
  • Fresh coriander  1/2 cup
  • Tomato & cucumber spice  1 cup
  • Cooking oil  6 tbsp

Method:

  1. Cut lamb ribs in 3 inch slices.
  2. Then paste salt and black pepper and put in glass bowl.
  3. After that, place it in fridge for overnight.
  4. Put onion, garlic, red chili, coriander powder, soya sauce and sesame oil in one bowl and mix it.
  5. Now spread this mixture on mutton and keep in fridge.
  6. Take out in oven proof dish and grill in oven.
  7. When brown in color, take out in a dish.
  8. Serve with tomato, cucumber and green coriander salsa.

Ingredients for Afghani Salad:

  • Cucumber  05
  • Tomato  05
  • Onion  1-1/2
  • Capsicum  03
  • Green chilies  04
  • Parsley  1 cup
  • Salad leaf  1 bunch
  • Green, black olives  1/2 cup
  • Lemon juice  2 tbsp
  • Olive oil  1 tbsp
  • Salt  to taste
  • Black pepper powder  to taste

Method:

  1. Cut cucumber and tomato into small cubes.
  2. Also cut onion into small slice cubes. Also cut capsicum into small cubes.
  3. Cut green chilies and parsley finely.
  4. Cut olives in slice rings.
  5. Put all ingredients in one big bowl and mix it.
  6. Add lemon juice, salt, black pepper and olive oil and mix it nicely.
  7. Spread salad leave in one big dish.
  8. Put salad on top.
  9. Decorate with whole olives and green chilies on sides and serve.
