Special Claypot Chicken And Prawns Wonton Soup by Chef Zakir

Ingredients for Special Claypot Chicken:

For Stuffing:

  • Chicken with skin  1 whole
  • Chicken mince  375 gm
  • Onion   1
  • Egg   1
  • Tomatoes chopped  2
  • Capsicum  half
  • Boiled peas  1/2 cup
  • Parsley chopped  1/4 bunch
  • Coriander leaves  1/4 bunch
  • Raisin  50 gm
  • Green olives  8 to 10
  • Salt  to taste
  • Black pepper powder 1/2 tsp

For Marination:

  • Papaya paste  2 tbsp
  • Lemon juice  2 tbsp
  • Chili powder  1 tbsp
  • Crushed red pepper  1 tbsp
  • Turmeric  1 tbsp
  • Ginger garlic paste  2 tbsp
  • Cumin seeds ground 1 tbsp
  • Salt  to taste
  • Oil  2-3 tbsp
  • Clay soil  1 kg
  • Flour  750 gm
  • Egg  3
  • Butter paper  as required

Method:

  1. First, mix clay soil, flour and egg with some water, knead it in one bowl, keep it aside.
  2. Now add chicken mince in chopper, add onion, green coriander, parsley, salt and black pepper powder and grind it.
  3. Then add boiled peas, capsicum, chopped tomato, salt, black pepper powder, green coriander, olives, raisin and parsley in one bowl, mix it and keep it aside.
  4. Now open chicken from back side and make it boneless. Keep in mind that chicken pieces should not be separated.
  5. Now put ginger garlic paste, lemon juice, papaya paste, chopped red chili, crushed red chili, turmeric, chopped cumin, salt and oil in one bowl and make mixture.
  6. Now marinate chicken from outside and inside with this mixture nicely.
  7. When chicken is nicely marinate, stuff with chicken mince, bring it original shape and tie with thread so that it cannot be open.
  8. Now cover with butter paper and keep it aside.
  9. Now roll clay soil like roti and cover chicken nicely.
  10. Now keep on tray and keep in oven on 150 degree C for 25 to 30 minutes.
  11. Then take out and break dough from top.
  12. Serve chicken in pieces or whole.

Ingredients for Prawns Wonton Soup:

  • Prawns  200 gm
  • Flour 250 gm
  • Egg  1
  • Chicken stock  2 glasses
  • Spring onion  1
  • Ginger 1 medium piece
  • Curry leaves 2-3
  • Vinegar 1 tbsp
  • Corn flour 1 tbsp
  • Salt  to taste
  • Black pepper powder  1/2 tsp
  • Egg beaten  1

Method:

  1. First, knead flour with beaten egg, salt and some water and roll in shape of thin sheet. Then cut in square shape and keep aside.
  2. Now put prawns, vinegar, salt, black pepper, half egg and corn flour and grind lightly.
  3. Heat chicken stock in separate pan, put salt and black pepper powder and cook it.
  4. Make batter of remaining half egg and flour in one bowl.
  5. Now put chicken mince on square piece and pack wonton with batter.
  6. When all wonton becomes ready, add in chicken stock and cook for 3 to 4 minute.
  7. When ready, serve sauce hot.
