Coconut Cupcakes, Fluffy Eggless Pancakes And Baked Capsicum by Zarnak Sidhwa

Ingredients for Coconut Cupcakes:

  • Flour 2 cups
  • Baking powder 3/4 tsp
  • Baking soda 1/2 tsp
  • Salt 1/2 tsp
  • Unsalted butter 1 cup
  • Caster sugar 1 cup
  • Light brown sugar 1/4 cup
  • Eggs 3
  • Vanilla essence 1 tsp
  • Almond essence 1 tsp
  • Coconut milk 3/4 cup
  • Shredded coconut 1/2 cup
  • Shredded coconut to sprinkle

For Frosting:

  • Unsalted butter 1 cup
  • Icing sugar 3 cups
  • Vanilla essence 1/2 tsp
  • Almond essence 1/2 tsp
  • Salt 1/4 tsp
  • Coconut milk 2 tbsp

Method:

  1. For The cupcakes: Beat butter, brown sugar, caster sugar, add eggs and both the essence, fold in flour, baking powder, baking soda and salt.
  2. Add the coconut milk and mix in the coconut.
  3. Spoon into cupcake tin lined with cupcake cases.
  4. Bake at 180 degrees C for at least 15-20 minutes or till done.
  5. Cool completely and frost with the coconut butter cream frosting. Top with shredded coconut.
  6. For the frosting: Beat butter, add icing sugar, vanilla essence, almond essence, salt and mix well.
  7. Add coconut milk and beat till all sugar is incorporated.
  8. Add more coconut milk if needed and icing sugar seems dry.

Ingredients for Fluffy Eggless Pancakes:

  • Flour 1-1/2 cups
  • Baking powder 4 tsp
  • Salt 1 tsp
  • Sugar 1 tbsp
  • Vinegar 1 tsp
  • Melted butter 4 tbsp
  • Milk 1-1/3 cups

Method:

  1. In a large bowl, shift together all ingredients.
  2. Add the vinegar, melted butter and milk.
  3. Whisk until there are only a few lumps.
  4. Ladle onto a medium hot frying pan.
  5. Flip when the first side is golden brown.
  6. Remove when the second side is golden brown.

Ingredients for Baked Capsicum:

  • Capsicum 4
  • Broccoli 1 cup
  • Eggs 4
  • Milk 1/2 cup
  • Garlic crushed 1/2 tsp
  • Salt to taste
  • Black pepper to taste
  • Cream 3 tbsp
  • Oregano 1/4 tsp
  • Cheese, grated 4 tbsp

Method:

  1. Heat oven to 180 degrees C.
  2. Cut about 1/2 inch off tops of capsicum and remove seeds.
  3. Place them upright in muffin trays.
  4. Spoon 1/4 cup broccoli into each capsicum.
  5. Beat eggs, cream, milk, garlic, salt and pepper and oregano in a bowl until blended.
  6. Pour evenly over broccoli.
  7. Sprinkle cheese and bake until knife inserted near center comes out clean, 15 minutes.
