Prawn Masala Biryani And Cucumber Raita by Chef Arif Dawood

Ingredients for Prawn Masala Biryani:

  • Prawns 1 kg
  • Basmati rice  750 gm
  • Ginger garlic paste  1 tbsp
  • Green chili 2 tbsp
  • Potato 250 gm
  • Tomato 4-5
  • Chopped red chilli 1 tbsp
  • Coriander powder 1 tbsp
  • Turmeric powder  1 tsp
  • Cumin 1 tbsp
  • Mix spice 1 tbsp
  • All spice powder 1 tsp
  • Nutmeg mace powder 1 tsp
  • Yogurt  1 tbsp
  • Chopped coconut 1 tsp
  • Fried onion 1 bowl
  • Curry leaves  2 sticks
  • Oil  1 bowl
  • Yellow color 1 pinch
  • Green color  1 pinch
  • Butter  2-3 tbsp

Method:

  1. Soak rice. Then put salt, cumin and mix spice and boil it.
  2. Heat oil in one pan, add fried onions, tomato and ginger garlic paste.
  3. Now put chopped potato cubes, red chili powder, coriander powder, turmeric powder, all spice powder, nutmeg mace powder, yogurt, coconut powder , curry leaves and salt and roast it nicely.
  4. When masala is ready, then prawns and chopped green chilies and roast it again.
  5. Put chopped coriander, mint and tomato slices on top.
  6. After that, add boiled rice, yellow colour and dissolved green color.
  7. In end, add ghee and simmer it.
  8. When ready, serve with raita.

Ingredients for Cucumber Raita:

  • Cucumber 2
  • Yogurt 250 gm
  • Crushed red chilli 1 tsp
  • Roasted & crushed cumin 1 tsp
  • Salt to taste

Method:

  1. Beat yogurt nicely.
  2. Now put cucumber cubes, chopped black pepper, roasted & crushed cumin and salt, mix it nicely and serve with biryani.
