Leshan Ka Gosht, Gondh Ka Halwa And Peanut Candy by Chef Gulzar

Ingredients for Leshan Ka Gosht:

  • Mutton 1/2 kg
  • Garlic 20 cloves
  • Onion 1
  • Yogurt 1 cup
  • Black pepper 1 tsp
  • Crushed cumin 1 tsp
  • Crushed coriander 1 tsp
  • All spice powder  1 tsp
  • Green chilies  8-10
  • Whole red chilies 6-8
  • Lemon juice  3 tbsp
  • Oil  to fry
  • Salt  to taste

Method:

  1. Heat oil in one pan, add onion and fry for 2 to 3 minutes.
  2. Now put garlic cloves slices in pan.
  3. Together add mutton and roast it nicely.
  4. Now put yogurt, crushed cumin, all spice powder, green chili, black pepper and salt, mix it nicely, add in mutton and cook it
  5. After that, add water as required and tender it.
  6. Then add red chili powder and lemon juice and mix it.
  7. In end, take out and serve in dish.
  8. Lehsan gosht is ready.

Ingredients for Gondh Ka Halwa:

  • Gondh 100 gm
  • Almonds  100 gm
  • Pistachio  100 gm
  • Walnuts 100 gm
  • Melon seeds  200 gm
  • Sesame seeds  100 gm
  • Parathay 3-4
  • Clarified butter  2 cups
  • Sugar 1 cup
  • Milk  2 cups

Method:

  1. Put ghee in one pot, fry gondh and keep it aside.
  2. Now add almonds, pistachio, walnuts, melon seeds and sesame seeds in this ghee, fry it and keep aside..
  3. Now fry parathay on tawa and crush it finely.
  4. After that, crush dry fruit and gondh.
  5. Now put all crush pieces in one mixing bowl and add sugar.
  6. Now put all ingredients in same ghee in which you have fried dry fruits, add milk and fry it nicely until all ingredients are mixed well.
  7. When fragrance comes, take out in dish and serve.

Ingredients for Peanut Candy:

  • Sugar 2 cups
  • White candy 1/2 cup
  • Roasted peanuts 1 cup
  • Butter 2-3 tbsp
  • Butter paper as required
