Ingredients for Coconut Rice Pudding:

  • 1/2 liter milk
  • 2 eggs
  • 1 cup sugar
  • 1/2 tsp vanilla essence
  • 1/4 tsp cinnamon
  • 1/2 tsp raisins
  • 1/2 cup rice flour
  • 1 cup coconut milk
  • 50 grams desiccated coconut

Method:

  1. First cook the milk. when it starts boil and starts to comes up, add sugar.
  2. Now add rice flour, coconut milk, egg, vanilla essence and chopped cinnamon beat it with batter.
  3. Then mix it in boiled milk, leave it for 20 minutes.
  4. When it becomes thick, take it out in dish and add raisins.

Ingredients for Mexican Flavored Chicken:

  • 1/2 kg boneless chicken
  • 50 grams butter
  • 2 tbsp oil
  • 2 onions
  • 1 tsp garlic
  • 1 cup ketchup
  • 1 cup stock
  • 2 tsp vinegar
  • 1 tsp red chili powder
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • 1 tbsp raisins
  • 2 capsicum
  • 2 tbsp chili sauce
  • 2 red chilies

Method:

  1. First heat the oil, add butter. Now add chopped garlic, onions and saute it.
  2. Now put the chicken boneless pieces and stock.
  3. Then add chopped red chili, salt cook it on low temperature for 10 minutes having cover on its top.
  4. When the chicken tenders add tomato ketchup, vinegar, green capsicum, chili sauce, chopped olives mix them all, turn off the stove.
  5. In the end add fresh red chilies, sprinkle raisins.

Ingredients for Mexican Chicken:

  • 1/2 kg soaked rice
  • 1 onion
  • 4 garlic cloves
  • 2 cups stock
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tomatoes
  • 1 cup peas
  • 2 tbsp chili paste
  • 2 capsicum
  • 1/2 cup oil
  • 1/2 tsp lemon zest

Method:

  1. Pour oil in a pan, heat it, add onions make them soft.
  2. Now add chopped garlic cloves. When it starts to smell add stock.
  3. Along salt, black pepper, chili paste, tomatoes.
  4. Then add soaked rice, leave it to cook.
  5. When they begin to simmer add capsicum, lemon zest.
