Chinatown Chicken, Spicy Fish Sticks And Turtle Sauce by Chef Gulzar

Ingredients for Chinatown Chicken:

  • Chicken  1/2 kg
  • Ginger garlic  2 tbsp
  • Star anise flower  2
  • White pepper  1/2 tsp
  • Black pepper  1 tsp
  • Soya sauce  1/2 cup
  • Brown sugar  4 tbsp
  • Vinegar  2 tbsp
  • Honey  1 tbsp
  • Cornflour  1 tbsp
  • Chinese salt 1/2 tsp
  • Oil  1-2 tbsp
  • Salt  to taste

Method:

  1. Boil the chicken with ginger garlic, water, star anise flower.
  2. Now add chopped white pepper, chopped black pepper, soya sauce, brown sugar, vinegar, honey, cheese salt, oil, salt mix them with chicken  and cook.
  3. When chicken becomes to tender add corn flour with water mix it and make it thick.
  4. In the end take it out and then garnish it, serve it with fries.

Ingredients for Spicy Fish Stick:

  • Fish (boneless)  500 gm
  • Egg whites  2
  • Corn flour 1 tbsp
  • Ginger garlic paste  1 tbsp
  • Red chili powder  1 tbsp
  • Turmeric powder  1/2 tsp
  • All spice powder  1/2 tsp
  • Carom seeds  1/4 tsp
  • Fenugreek seeds  1/2 tsp
  • Lemon juice  2 tbsp
  • Flour  2 tbsp
  • Yellow food color  a pinch
  • Oil  to fry
  • Salt  to taste

Method:

  1. Put egg white, corn flour, ginger garlic paste, red chili powder, turmeric, chopped garam masala, flour, lemon juice, fenugreek seeds, yellow food color, salt and mix it nicely, make the batter.
  2. Now cut the fish into steaks, then marinate it with this batter and leave it for half hour.
  3. Then pour oil in a pan fry the fish sticks.
  4. Then keep it on tissue paper so that the oil can be absorb by it.
  5. Then place it in serving dish and serve it with turtle sauce.
