Kaleji Sabzi Wali, Cheesy Roti And Khubani Ki Chutney by Chef Zakir

Ingredients for Kaleji Sabzi Wali:

  • Chicken liver 1/2 kg
  • Oil  1/4 cup
  • Onion  1
  • Cinnamon sticks  2 pieces
  • Potatoes  2
  • Green gourd 2
  • Bottle gourd  1
  • Tomatoes boiled
  • Ginger garlic paste  1 tbsp
  • Coriander powder  1 tsp
  • Cumin powder  1 tsp
  • Turmeric  1 tsp
  • Chili powder  2 tsp
  • Green chilies  2-3
  • All spice powder 1/4 tsp
  • Coriander leaves  1/4 bunch
  • Water  1/2 cup
  • Salt  to taste

Method:

  1. First pour oil in a pan add cinnamon, chicken liver cook it on high temperature, roast
  2. it for 2 to 3 minutes.
  3. Now add onions, chopped potatoes roast it more for 2 to 3 minutes.
  4. Then add ginger garlic paste, chopped coriander, chopped cumin, turmeric, chopped
  5. red chili, cook it for 2 to 3 minutes.
  6. Now add bottle gourd, chopped green gourd, boiled tomato, mix it for 1 to 2 minutes.
  7. Then add half cup water, cover and let it cook.
  8. Remove its cover after 10 to 15 minutes roast it well. After that take it out by adding
  9. green chilies, green coriander.
  10. In the end sprinkle garam masala and then serve.

Ingredients for Cheesy Roti:

  • Yogurt 100 gm
  • Fine wheat flour 1/2 kg
  • Sugar 1 tsp
  • Baking powder 1 tsp
  • Yeast 1 tbsp
  • Ghee 1 tbsp
  • Egg beaten 1
  • Warm milk 1/4 liter
  • Mozzarella cheese 1 packet
  • Salt  to taste

Method:

  1. First pour yogurt and beat it nicely.
  2. Now put the white flour, sugar, baking powder, salt mix it nicely.
  3. Now mix the yeast with hot milk in a bowl.
  4. Together put ghee, beaten yogurt and beaten egg and knead it well.
  5. Then put it in glass bowl cover it with plastic, leave it  for 20 to 25 minutes, so that it can rise.
  6. Now heat the oven n 250 Degree C.
  7. Then make the portions from that dough, roll it out.
  8. Then add grated cheese, mozzarella cheese, make portions again, sprinkle the flour and roll out the roti.
  9. When all becomes ready, then bake it on oven tray.
  10. When they turns to golden colour, serve it hot.

Ingredients for Khubani Ki Chutney:

  • Apricot  200 gm
  • Brown sugar  3 tbsp
  • Sugar  3 tbsp
  • Chili powder  1/2 tsp
  • Green chilies  1
  • Tamarind paste  2 tbsp
  • Dried plum  2-3
  • Orange juice 1 cup
  • Cumin seed  1/2 tsp
  • Sesame seeds 1 tsp
  • Peanuts chopped  25 gm
  • Salt  to taste
  • Oil  2 tbsp
  • Water  1/2 cup

Method:

  1. First pour oil in a pan, add cumin and roast for few seconds.
  2. Then add wet apricot, orange juice, dried plum.
  3. When it starts to cook add brown sugar, sugar, salt, tamarind paste, chopped red chili,
  4. water, leave it to cook and simmer it.
  5. After 8 to 10 minutes when the apricot tenders, remove its cover, keep the
  6. temperature high, dry its water.
  7. Delicious khubani ki chutney is ready.
