Bake Mewa Bread, Shaljam Bhaji And White Chicken Stew by Rida Aftab

Ingredients for Bake Mewa Bread:

  • 6 bread slices
  • 1 cup dates, raisins, almonds
  • 1/2 tsp cardamom
  • 4 eggs
  • 1 cup sugar
  • 250 grams khoya
  • 250 grams cham cham
  • 2 cups milk
  • Oil as required

Method:

  1. Heat oil. Now fry bread slices until golden brown and take out.
  2. Now put milk and sugar in one pot and cook it.
  3. Then add eggs and cardamom powder and beat with batter. Put hot milk in batter and mix it.
  4. After that, put bread slices in oven prof dish and then egg and milk mixture on top.
  5. Now keep cham cham mix and put khoya.
  6. Then put dates, raisins and almonds and bake in preheated oven for 30 minutes.

Ingredients for Shaljam Bhaji:

  • 1/2 kg turnip
  • 250 grams carrots
  • 250 grams tomatoes
  • 1 cup peas
  • 1 cup fenugreek
  • 4 green chilies
  • 12 red whole chilies
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp all spice powder
  • 1 tsp cumin
  • 1 tbsp chopped garlic
  • 1/2 cup oil

Method:

  1. Cut turnip, carrot, tomatoes and fenugreek finely.
  2. Now heat oil and put whole red chilies, garlic and cumin.
  3. Together add turmeric, salt and all spice powder.
  4. After that, put chopped vegetables and peas, cover it and cook on low flame.
  5. When vegetables are tender, dry it water on high flame. Shaljam Bhaji is ready.

Ingredients for White Chicken Stew:

  • 1/2 kg chicken
  • 1 cup blended onions
  • 250 grams yogurt
  • 10 green chilies
  • 2 tsp ginger garlic paste
  • 2 tbsp sliced ginger
  • 2 tbsp sesame seeds
  • 2 tbsp desiccated coconut
  • 2 tbsp peanuts
  • 4 cardamoms
  • 2 tsp cumin
  • 1/2 tsp mace
  • 1/2 tsp nutmeg
  • 1 tsp whole black pepper
  • 2 bay leaves
  • 1 cup oil
  • 8 red chilies
  • Salt as required

Method:

  1. First, heat oil and put blended onions.
  2. When onions becomes light pink in colour, add chicken in it.
  3. Together put ginger garlic paste, salt and whole black pepper.
  4. Then mix green chilies and yogurt well, add in it and cover it.
  5. Roast desiccated coconut, sesame seeds and peanuts and grind it.
  6. Then roast nutmeg, mace and green coriander and grind it.
  7. When water of chicken dries, add red chilies, grinded & roasted masala and chopped cardamom.
