Ingredients for Christmas Cake:

For Cake:

• Unsalted butter 6 oz
• Brown sugar 8 oz
• Eggs 3
• Flour 8 oz
• Baking powder 1/2 tsp
• Almonds 3 oz
• Ginger powder 1 tbsp
• Mixed cake spice 1 tsp
• Cinnamon 1 tsp
• Dried mixed fruit 9 oz
• Black currants 200 gm
• Brown sultanas 100 gm
• Golden raisins 300 gm
• Orange peel 100 gm
• Red glaze cherries 2 oz
• Fresh orange zest 1 lemon
• Fresh orange juice 100 ml
• Orange juice as required
• Apricot jam as required
  

Ingredients for Marzi Pan:

• Almonds 8 oz
• Caster sugar 8 oz
• Icing sugar 8 oz
• Eggs 1-2
• Almond essence 1 st
  

Ingredients for Fandant Icing:

• Icing sugar 500 gm
• Liquid glucose 1 tbsp
• Glycerin 1 tsp
• Egg white 1 to 1-1/2
  

Ingredients for Royal Icing:

• Egg whites 2
• Icing sugar 2 oz
• Lemon juice 2 tbsp
