Imperial Fried Chicken Kababs, Shahi Gola Kabab Masala And Chicken Khoasay by Shireen Anwer

Ingredients for Imperial Fried Chicken Kababs:

  • Chicken 1 kg or 8 pieces
  • Ginger garlic paste  1 tbsp
  • Yogurt  2 tbsp
  • All spice 1/2 tsp
  • Roasted cumin crushed  1/2 tsp
  • Orange color 1 pinch
  • Turmeric 1 pinch
  • Chili powder 2 tsp
  • Coriander crushed  2 tsp
  • Salt 1-1/2 tsp
  • Vinegar 1 tbsp
  • Egg 1
  • Corn flour 4 tbsp

Method:

  1. Marinate chicken with ginger garlic paste, yogurt, all spice, roasted & crushed cumin, orange color, turmeric, chili powder, crushed coriander, salt, vinegar, egg and corn flour for 2 hours.
  2. Then deep fry for 20 minutes until they turn to light golden color and chicken tenders.
  3. Now serve with onion rings.

Ingredients for Shahi Gola Kabab Masala:

  • Mince  1/2 kg
  • Onion brown  1/2 cup
  • All spice  1 tsp
  • Salt  1 tsp heaped
  • White cumin whole  1 tsp
  • Poppy seeds  1 tbsp
  • Desiccated coconut  1 tbsp
  • Yogurt  1 tbsp
  • Ginger garlic paste  1 tbsp
  • Roasted gram  1 tbsp
  • Raw papaya paste  1/2 tsp
  • Chili powder 1-1/2 tsp
  • Onion chopped  1
  • Green chilies chopped 2
  • Oil 1/2 cup
  • Ginger garlic paste  1 tbsp
  • Salt 3/4 tsp
  • Coriander leaves  2 tbsp
  • Chili powder  1-1/2 tsp

For Masala:

  • Onion chopped 1
  • Green chillies chopped 2
  • Oil 1/2 cup
  • Ginger garlic paste 1 tbsp
  • Salt 3/4 tsp
  • Coriander leaves 2 tbsp
  • Chilli powder 1-1/2 tsp

Method:

  1. Roast poppy seeds, desiccated coconut and white cumin on tawa.
  2. Then grind finely with roasted gram.
  3. Now add yogurt, all spice, ginger garlic paste, salt, chili powder, raw papaya paste and fried onion and mix it nicely.
  4. Then make the big gola kababs and keep it aside.
  5. For making masala: Heat oil in one pan and fry onions until light brown.
  6. Now put ginger garlic paste, chilli powder and salt, roast it nicely, add 1/2 cup water and cook it.
  7. Now add gola kababs, cover it and cook on low flame.
  8. In end, put chopped green chillies and chopped coriander and serve.

Ingredients for Chicken Khoasay:

  • Boneless chicken 1/2 kg
  • Onion 1
  • Green chilies  12
  • Ginger garlic paste  1 tbsp
  • Salt 1-1/2 tsp
  • Turmeric 1/2 tsp
  • Chili powder 1 tsp
  • Coconut milk powder 1/2 cup
  • Spaghetti boiled  1 packet
  • Roasted gram flour  5 tbsp
  • Oil  3/4 cup

For Serving:

  • Garlic fried  3 tbsp
  • Spaghetti fried  1 cup
  • Crushed red chilies  as required
  • Boiled eggs  2
  • Green chilies  4
  • Coriander leaves  2 to 3 tbsp
  • Green onion  1/2 cup
  • Brown onion  1/2 cup
  • Lemon slices as required

Method:

  1. Cut chicken boneless into cubes.
  2. Heat oil in one pot, put chopped onions and chopped green chilies and fry it.
  3. Then put ginger garlic paste, salt, turmeric and chilli powder and roast it.
  4. Now add chicken cubes, roast for 5 minutes and put 2 cups water.
  5. Together dissolve roasted flour water, add in chicken and mix it nicely.
  6. When it boils, dissolve coconut milk powder in water and add it.
  7. After boiling, cook for 5 minutes, make gravy thick and remove from stove.
  8. In end, serve chicken curry with boiled spaghetti, fried chopped garlic, fried spaghetti, crushed red chilies, boiled egg, chopped green chilies, chopped green coriander, chopped green onion, chopped fried onions and lemon juice.
