Sheermal, Jamaia Masjid Ka Mutton Qorma And Memni Masalay Dar Biryani by Shireen Anwer

Ingredients for Sheermal:

  • Flour  2 1/2 cups
  • Salt  3/4 tsp
  • Caster sugar  1 tbsp heaped
  • Khoya  1/2 cup
  • Instant yeast  2 1/2 tsp
  • Kewra water  1 tsp
  • Ghee  3 tbsp heaped
  • Cream  3 tbsp
  • Egg  1
  • Full cream milk  4 tbsp heaped
  • Luke warm water  to make dough

Method:

  1. Add flour, salt, sugar, coconut, yeast, coconut powder, ghee, cream, egg, fresh cream milk mix them all with warm water and knead it, leave it to rise.
  2. Now make 3 -4 balls of it. Now press it on hand, and spread it on foiled tray.
  3. Now make the hole in its center with the help of folk.
  4. Then cover it for 45 minutes.
  5. After that brush the milk, and sprinkle the sesame seed.

Ingredients for Jamaia Masjid Ka Mutton Korma:

  • Mutton 1/2 kg
  • Brown onion 1/2 cup
  • Ginger Garlic Paste 1 tbsp
  • Turmeric 1/4 tsp
  • Salt 1 tsp
  • Yogurt 1 cup
  • Ghee 1/2 cup
  • Cream 2 tbsp
  • Kewra water 1 tsp
  • Saffron 1/4 tsp
  • Mace 1/4 tsp
  • Green cardamom powder 1/2 tsp

For Masala Grind Together:

  • Coriander seeds 1 tbsp
  • Black pepper whole 10
  • Chilli powder 1-1/2 tsp
  • Cloves 4

Method:

  1. First pour oil in a pan add ginger garlic paste, mutton, turmeric, salt, yogurt, cover and let it cook, dry its water.
  2. Now roast the mutton, till it turns to light brown.
  3. Then put the grind masala, mix it and pour 2 cup water.
  4. Now cover it and cook it on low temperature, till the mutton tenders.
  5. Then add mace, green cardamom, saffron and cream.
  6. In the end add kewra essence simmer it for 10 minutes, until the ghee starts to comes up.

Ingredients for Memni Masalay Dar Biryani:

  • Chicken 1 kg
  • Oil 1 cup
  • Ginger garlic paste  3 tsp heaped
  • Chili powder 3 tsp heaped
  • Coriander powder  4 tsp
  • Salt  2 tsp heaped
  • Brown onion  1 1/2 cup
  • Yogurt  2 cups
  • Nutmeg ground 1/4 tsp
  • Mace ground 1/4 tsp
  • Green cardamom 1/2 tsp
  • Ground  1/2 tsp
  • Tomatoes  2 cut into
  • Whole green chilies 8
  • Saffron  1/2 tsp
  • Milk  1 cup
  • Yellow color  pinch
  • Whole spices  1 tbsp
  • Whole mix spices  1 tsp
  • Rice  750 gm
  • Salt  3 tbsp
  • Black cumin  1 tsp
  • Potatoes fried  4 cut

Method:

  1. Add rice, salt, garam masala, water boil it nicely, then separate them.
  2. Now pour oil add garam masala, chicken fry it for 5 minutes.
  3. Then add ginger garlic paste, red chili powder, salt, chopped coriander and then roast it.
  4. Now add fried onions, water, tender the chicken half, cover it and let it cook.
  5. Then add beaten yogurt, fried potatoes, cover and let it cook for 10 minutes.
  6. In the end add chopped mace ground, ground, chopped coriander.
  7. Method For Serving Biryani: Put the half boiled rice in pan, pour chicken masala on it.
  8. Together put green chilies, tomato slices and green coriander and put remaining rice.
  9. Now add fried onions.
  10. Then pour milk and yellow color.
  11. Now add saffron, ghee and simmer it for 15 minutes.
