Memni Mahi Pulao, Doughnut And Lacha Kabab by Shireen Anwer

Ingredients for Doughnuts:

  • Flour 1 kg
  • Caster sugar 4 ounces
  • Butter melted 200 gm
  • Salt 1 tsp
  • Instant yeast 2 tbsp
  • Eggs 4
  • Powder milk 1 cup
  • Warm water to knead

For Chocolate Frosting:

  • Icing sugar 1 cup
  • Butter 1 tsp heaped
  • Cocoa powder 1 tbsp leveled
  • Water 2 tbsp

For Glazed Doughnuts:

  • Icing sugar as required

For Strawberry Glazed:

  • Icing sugar 1 cup
  • Water 2 to 3 tbsp
  • Strawberry essence 1 drop
  • Pink color 1 drop

Method:

  1. For Doughnuts: Take one bowl, put flour, caster sugar, butter melted, salt, instant yeast, eggs and powder milk and knead with warm water.
  2. Now put into greased bowl for one hour and leave it when it becomes double.
  3. Then make equal balls of this dough.
  4. Then put into foil of tray, press it and make hole in center with small round cutter, in order that it becomes in shapes of doughnuts.
  5. Cover it and leave for 35-45 minutes.
  6. Then deep fry on low flame.
  7. For Chocolate Frosting: Mix icing sugar, butter, cocoa powder and water in one pan, cook it and cool it.
  8. When it becomes light thick, then dip doughnuts in it, roll into any decoration or in white chocolate or in nuts.
  9. For Glazed Doughnuts: Roll fry doughnuts into icing sugar on both sides.
  10. For Strawberry Glazed: Put icing sugar, water, strawberry essence and pink color in one pan and cook it until it becomes thick.
  11. Now dip fried doughnuts into glazed.
  12. Then sprinkle pink sugar and serve it.

Ingredients for Lacha Kabab:

  • Undercut beef boti  1 kg
  • Ginger garlic paste 2 tbsp
  • Green chilies  15 grinded
  • Whole red chilies 12
  • White cumin whole 1 tbsp
  • Salt  -1/2 tsp
  • Corn flour 4 tbsp
  • All spice 1 tsp
  • Coriander leaves  1/2 cup
  • Green chilies  6
  • Eggs  2 to 3
  • Oil  for deep frying

Method:

  1. Boil  undercut beef boti with 4 cups water, ginger garlic paste, whole red chilies, cumin and salt.
  2. Then cook until it water dries.
  3. Then grind in chopper.
  4. Then take out this mixture in bowl, add cornflour, all spice, chopped coriander, green chilies and eggs and mix it well.
  5. Now give it shape of long kabab, give smoke of coal and deep dry it.
