Achari Murgh Rice, Egg Jalferazi And Creamy Cabbage Soup by Zubaida Tariq

Ingredients for Achari Murgh Rice:

  • Rice  2 cups
  • Chicken boneless  1/2 kg
  • Chopped onion  3
  • Yogurt  1/2 cup
  • Onion seeds 1 tsp
  • Green chilies  8
  • White cumin  1 tsp
  • Ginger garlic paste  1 tbsp
  • Lemons  4
  • White vinegar  1 tsp
  • Mustard seeds  1 tsp
  • Turmeric  1 tsp
  • Red chili flakes  1 tsp
  • Salt  to taste
  • Curry leaves  as required
  • Coriander seeds  1 tbsp
  • Chopped tomatoes  2
  • Mint leaves  1/2 bunch
  • Oil  1 cup

Method:

  1. Fry chopped onions until golden brown.
  2. Now waste the water in which the rice were kept, add fresh water, salt, white vinegar, boil and simmer it for 5 minutes.
  3. Then pour oil in a pan, add chicken, salt, turmeric, ginger garlic paste, dry its water.
  4. Now add the beaten yogurt, chopped tomato, chopped red chili, mustard seeds, onion seeds, white cumin, long and thin green chilies roast them all nicely.
  5. Then add some curry leaves, lemon juice and  then simmer it.
  6. When you have to serve, mix the boiled rice properly, heat it and sprinkle lemon juice.
  7. In  end, take out rice, put fried onions and mint and serve hot.

Ingredients for Egg Jalferazi:

  • Eggs  4 (boiled)
  • Capsicum 2 (cubed)
  • Onion  2
  • Cloves  8
  • Tomato ketchup 1 cup
  • Oil  1/2 cup
  • Ginger garlic paste  1 tsp
  • Crushed red chili  1 tsp
  • White cumin  1 tsp
  • Chili sauce  2 tbsp
  • Salt  to taste

Method:

  1. Pour oil in a pan add ginger garlic paste and roast it nicely.
  2. Now add tomato ketchup, chili sauce, salt, roasted and chopped white cumin, chopped red chili and roast it slightly.
  3. After that add oil and add capsicum cubes and onions, stir fry it, put it in masala.
  4. Now add boiled eggs, put them in fry pan for frying.
  5. After that spread them in 2 pieces, pour chili sauce.
  6. Serve the delicious Egg Jalferazi with hot rice.

Ingredients for Creamy Cabbage Soup:

  • Chopped cabbage  1
  • Chicken bones  as required
  • Salt  to taste
  • Garlic cloves  3
  • Black pepper as required
  • Whole black pepper 3
  • Water  2 cups
  • Fresh milk  1 cup
  • Butter  1 tsp
  • Corn flour  1 tsp
  • Flour  1 tbsp
  • Fresh cream  2 tbsp
  • Parsley  as required

Method:

  1. First wash the bones of chicken, pour water, garlic cloves, whole black chilies with stock and then filter it.
  2. Now add ready stock in pan, add chopped cabbage, salt, cook it lightly, turn off the stove.
  3. Then add butter heat it and add flour, roast it and remove it from stove.
  4. After that add fried onions and stir it with wooden spoon, when it starts to thick, remove it from stove.
  5. Then add cornflour in water, Along white sauce and cook it lightly.
  6. After that, add fresh cream, chopped black pepper and serve hot.
