Beef Rice With Coconut & Ginger Sauce, Massaman Curry And Naam Touk by Chef Gulzar

Ingredients for Beef Rice With Coconut & Ginger Sauce:

  • Beef  1/2 kg
  • Rice  1/2 kg
  • Onion  1
  • Chopped garlic  1 tbsp
  • White pepper  1/2 tsp
  • Cinamon  1/2 cup
  • Coconut milk 1/2 tsp
  • Stock  1 liter
  • Lemon leaves  2 to 3
  • Curry powder  1 tbsp
  • Green onion 1 to 2 sticks
  • Oil  2 tbsp
  • Salt  to taste
  • Ginger sauce:
  • Ginger  1 inch
  • Red chilies  3 to 4
  • Cloves  3 to 4
  • Vinegar  2 tbsp
  • Fish sauce  1 tbsp

Method:

  1. For Ginger Sauce: Put ginger, red chili, cloves, vinegar, fish sauce in a blender and keep it on a side.
  2. For Beef: Wash the rice with water and keep them in water for 2 hours, pour oil add chopped garlic and fried onions.
  3. Then add beef for frying.
  4. When it changes its color, add ginger sauce, coconut milk, salt, curry leaves, chopped cinnamon, chopped white chilies and let it cook.
  5. Now add lemon leaf, stock, rice and cook it till the rice tender.
  6. In the end take out in a dish and garnish it with ginger slice, then serve.

Ingredients for Massaman Curry:

  • Beef mince  300 gm
  • Garlic 4 to 5 cloves
  • Onion  2
  • Potato  2 to 3
  • Small cardamom  3 to 4
  • Cloves  2 to 3
  • Cinnamon  2 to 3
  • Whole cumin  1/2 tsp
  • Red chili  2 to 3
  • Curry paste 1 tbsp
  • Fish sauce  1 tbsp
  • Lemon grass 1 to 2
  • Tamarind paste 2 tbsp
  • Coconut milk  1 cup
  • Brown sugar  1 tbsp
  • Roasted peanuts  1/2 cup
  • Green coriander  1/2 cup
  • Oil  2 to 3 tbsp
  • Salt  to taste

Method:

  1. Add all small cardamom, cloves, cinnamon, whole cumin steam it .
  2. Put the red chilies, masala with mince in chopper and mix it.
  3. Heat the oil in a pan add garlic, onions for frying.
  4. Now add masala mince and fry it.
  5. Then add fish sauce, potato, coconut milk, curry paste or curry powder, salt  for frying.
  6. Now add brown sugar, tamarind pulp, roasted peanuts and mix it.
  7. Then add lemon grass and take it out in dish.
  8. In the end garnish it with green coriander  sticks.

Ingredients for Naam Touk:

  • Beef  1/2 kg
  • Papaya paste  1/2 cup
  • Rice  2 to 3 tbsp
  • Whole red chili  3 to 4
  • Fish sauce  2 to 3 tbsp
  • Soya sauce  5 tbsp
  • Green onion  1/2 cup
  • Green coriander 1/2 bunch
  • Green mint  1/2 bunch
  • Chinese salt  1 tsp
  • Lemon juice  3 to 4 tbsp
  • Salad juice  2 to 3
  • Tomato  1 to 2
  • Cucumber  1
  • Oil  2 to 3 tbsp
  • Salt  to taste

Method:

  1. Take beef pasanday, salt, soya sauce, papaya paste, marinate it with 2 to 3 hours in a mixing bowl.
  2. Now put the per marinated beef on a pan, fry it and remove it from stove.
  3. Now heat the coal and place the pasanday in pan with coal, having cover on its top, simmer it.
  4. Then take out the beef pasanday.
  5. Then put the red chili, fish sauce, chopped green coriander, chopped mint, chopped and roasted rice, green onion, Chinese salt, lemon juice, mix it nicely in a separate mixing bowl.
  6. Then add beef in Juline slices and mix it properly.
  7. Now take it out in a slattern plate and garnish with cucumber, tomato and salad leaves.
