Ingredients for Cheese Biscuits:
Flour 1 cup
Salt 1/2 tsp
Pepper 1/2 tsp
Mustard 1/2 tsp
Butter 4 oz
Cheddar cheese 4 oz
Fine oats 2 tbsp
Paprika 1 tsp
Egg white 1
Method:
Put flour, salt, pepper, mustard in a bowl and add the butter and rub it in till it resembles fine crumbs, stir in the cheese and mix to a dough and knead on a lightly floured surface, roll out thinly and cut in any shape and place on baking sheets.
Mix together the fine oats and paprika and brush each biscuit on the tray with the egg white and sprinkle the oat-paprika mixture.
Bake at 220 degrees C for 5-6 minutes or till pale in color.
Cool and carefully remove with a palette knife.
Ingredients for Mocha Nut Fudge:
Sugar 450 gm
Cream 1-1/4 cup
Butter 1-1/4 cup
Strong black coffee 2/3 cup
Chocolate 8 oz
Walnuts, chopped 1 cup
Method:
Combine sugar, cream, butter, stir until coffee dissolves.
Add chocolate and let melt.
Let boil till 114 degrees C on a sugar thermometer.
Stir in the nuts.
Remove from heat and boil till it begins to thicken.
Immediately pour in a 8 inch square dish and let cool and then cut in squares.
Wrap in individual ding pieces or colorful cellophane paper.
Ingredients for Fish Nicoise:
Onion, sliced 1
Garlic crushed 1 clove
Olive oil 2 tbsp
Capsicum 1
French beans a few
Tomatoes 2-3
Black olives 6-8
Sugar 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Fish Fillet 1/2 kg
Oregano 1 tsp
Method:
Put a steamer with water to boil.
Heat the olive oil and saute onion and garlic, add tomatoes, beans and capsicums, olives, sugar, salt, and pepper, simmer and transfer to a foil piece on a steamer and place fish fillets on it and steam for 5-10 minutes, sprinkle oregano and serve in the foil.
