Cinnamon rolls, Qeema Phali, Chicken and vegetable tempura By Rida Aftab

Ingredients for Cinnamon Rolls:

For Dough:

  • 1/4 ounce yeast
  • 1/2 cup water
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/3 cup butter
  • 1 tsp salt
  • 1 egg
  • 4 cups flour

For Filling:

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 tbsp cinnamon
  • 3/4 cup dry fruits

For Gaze:

  • 4 tbsp butter
  • 2 cups sugar
  • 1 tsp vanilla essence
  • 3-6 tbsp water

Method:

  1. Preheat the oven on 180 Degree C.
  2. Now add yeast and water in a bowl.
  3. Then pour milk, sugar, salt, and egg in a bowl and beat it.
  4. Now beat the flour till the mixture becomes smooth.
  5. Then put the mixture of yeast and remaining flour, knead it.
  6. After that put the dough in greased tray, until it rises.
  7. Now roll it to the size of 15x9 .
  8. Then add butter into it.
  9. Add sugar, cinnamon mix it melted butter in a bowl.
  10. Then sprinkle the dry fruits, roll it and cut it into 12 to 15 pieces.
  11. Now grease the pan, sprinkle sugar, add cinnamon roll  pieces and keep it for 45 minutes for rising.
  12. Now bake it for 20 to 25 minutes.
  13. For glaze add butter, sugar, vanilla essence, hot water and cook it, until the sugar is saturated, now pour it on roll then serve.

Ingredients for Keema Phali:

  • 1/2 kg beef mince
  • 12/ kg phali
  • 250 grams tomatoes
  • 1 piece of ginger
  • 2 onions
  • 6 green chilies
  • 6 garlic cloves
  • 12 whole red chilies
  • 1 tbsp whole coriander
  • 1 tbsp pomegranate seeds

Method:

  1. First wash the mince, add water, onion, cumin, whole coriander, and round chilies, whole black pepper, mustard seeds, turmeric, salt, garlic cloves. Now cover it for 20 minutes and roast it on high temperature.
  2. Now add green chilies, water, cook it till tenders.
  3. Then add phali and simmer it for 10 minutes.
  4. In the end take it out in a dish and serve it by putting green coriander and chopped ginger.

Ingredient for Chicken & Vegetable Tempura:

  • 1/2 tsp chicken
  • 1 egg
  • 1 brinjal
  • 1 potato
  • 1 onion
  • 1/2 cup corn flour
  • 1/2 cup flour
  • Soda water as required
  • 1 tsp black pepper
  • 1 tsp mustard powder
  • 1 tbsp soya sauce
  • 2 tsp vinegar
  • 1/2 tsp salt
  • 1/2 tsp red chili
  • 1/2 tsp baking powder
  • 2 tbsp chili sauce
  • Oil for frying

Method:

  1. Add vinegar, soya sauce, chili sauce, mustard powder, salt, red chili powder mix them with chicken and leave it for half an hour.
  2. Pour flour, corn flour, baking powder, black pepper, salt, egg and soda water in individual pan.
  3. Then put the chicken slices, and deep fry it.
  4. Cut brinjals in same way and add potatoes, onions deep fry it.
