Ingredients for Badami Tangri:

  • Chicken legs  1 kg

First marination:

  • Salt  1/2 tsp
  • Red chili powder  1/2 tsp
  • Lemon juice  2-3 tbsp

Second marination:

  • Yogurt  1/2 cup
  • Cream  2 tbsp
  • Almond paste  2 tbsp
  • Dry fenugreek leaves  2 tsp
  • Corn flour  2 tbsp
  • Ginger garlic paste  2 tsp
  • Salt  3/4 tsp
  • Coriander leaves  2 tbsp

For Beating Sauce:

  • Butter, melted  3 tbsp
  • White pepper  1 tsp
  • Dry fenugreek leaves 2 tsp

For Garnishing:

  • Chaat masala  1/2 tsp
  • Lemon juice  1/2 tbsp

For Serving:

  • Onion rings  a few
  • Mint chutney  as required

Method:

  1. For the first marinate: Mix together the salt, chili powder and lemon juice, marinate the chicken legs in the mixture for half an hour.
  2. For the second marinade: Mix together the yogurt, cream, almond paste, dried fenugreek leaves, corn flour, ginger garlic paste, salt and fresh coriander in a bowl.
  3. Remove the chicken legs from the first marinate and place them in the second marinate.
  4. Marinate for at least two to three hours, preferably in a refrigerator.
  5. Preheat the oven to 180 Degree C.
  6. Place the marinated chicken legs in a greased dish and cook for fifteen minutes.
  7. For the basting sauce: Melt the butter; add the white pepper powder and dried fenugreek leaves and mix.
  8. Turn the chicken legs once and paste with this mixture.
  9. Grill for another eight minutes, or till cooked.

Ingredients for Heaven In A Glass:

  • Cooking chocolate  200 gm
  • Cream  200 gm
  • Milk  1/4 cup
  • Mixed fruit cocktail  1 cup
  • Nuts 1/2 cup
  • Cornflakes roasted  2 tbsp
  • Icing sugar  2 tbsp
  • Gelatin  1 tsp
  • Chocolate spread  2 tbsp
  • Chocolate sauce  as required
  • Apricots jam  1 tbsp
  • Chocolate grated  1 tbsp

Method:

  1. Melt the chocolate and milk together and stir until smooth.
  2. Cool the sauce. Then melt the gelatin with 1 tsp water and cool. Add to the cream mixed with icing sugar.
  3. Slowly add the chocolate mix.
  4. In a tall glass, coat the sides with chocolate sauce.
  5. Then pour 1/2 of chocolate mix and chill in fridge until set.
  6. Then add the chopped fruits keeping a few pieces aside.
  7. Add some chocolate spread nuts and cornflakes.
  8. Make a second layer of chocolate mix.
  9. Then repeat with fruits and nuts.
  10. Melt the jam and pour over the top Decorate with grated chocolate and chill until set.
  11. Serve cold.

Ingredients for Peach Clafouti:

  • Unsalted butter 1/2 tbsp
  • Sugar  7 tbsp
  • Peaches  1 can
  • Eggs  3
  • Vanilla essence 1/2 tsp
  • Salt  a pinch
  • Milk  1 cup

Method:

  1. Heat oven to 180 degree C Butter a 9 inch pie dish; dust with 1 tbsp sugar. Scatter peaches slices evenly over bottom of dish.
  2. In a blender, puree remaining 6 tbsp sugar, eggs, vanilla and salt until well blended.
  3. Add milk and flour; puree until smooth.
  4. Pour butter over peaches.
  5. Bake until default is set and knife inserted in center comes out clean, about 35 minutes.
  6. Cool completely. Dust with icing sugar just before serving.
