Dhuan Dani Gosht, Chilli Ginger Chicken Handi And Date & Tamarind Chutney by Zubaida Tariq

Ingredients for Date & Tamarind Chutney:

  • Tamarind paste  2 cup
  • Asafetida powder 2 tbsp
  • Dates  1 packet
  • Boiled almonds 10
  • Fresh red chilies  8
  • Jaggery  3 tbsp
  • Salt  to taste
  • Black salt  a pinch
  • Crushed cumin 1 tbsp

Method:

  1. First take out the seeds from dates.
  2. Now add tamarind paste filter it  and put it in a non stick pan.
  3. Then add dates, red chilies, asafetida powder, chopped and roasted white cumin, jaggery, boiled and peeled almonds, cook them for 5 minutes.
  4. Then remove it from stove.
  5. In the end when it becomes cool add salt, black salt.
  6. Tamarind and date chutney is ready.

Ingredients for Dhuan Dani Gosht:

  • Mutton 1/2 kg
  • Chopped onion 3
  • Turmeric 1 tsp
  • Ginger paste 1 tbsp
  • Green chilies 6
  • Fresh red chilies 6
  • Yogurt 1 -1/2 cup
  • Lemons 2
  • Black pepper 1/2 tsp
  • Salt  to taste
  • Oil 1 cup

Method:

  1. First cut the green chilies, red chilies mix them.
  2. Now pour oil in a pan, heat it add chopped onions make them golden brown.
  3. Now put the mutton, ginger garlic paste, salt, turmeric.
  4. Now mix the yogurt with onion in a blender.
  5. When the mutton water dries then roast it lightly.
  6. After that add onions, red chili, green chilies, black pepper, roast it well cook it on low temperature.
  7. When the mutton tender then beat the yogurt, simmer it.
  8. Then put the heated coal and few drops of oil, simmer it.
  9. After 5 minutes dhuan dahi gosht is read.
  10. Serve it hot with chapati.

Ingredients for Chilli Ginger Chicken:

  • Chicken boneless  1/2 kg
  • Ginger garlic paste  1 tbsp
  • Red chili flakes 1 tbsp
  • Turmeric  1 tsp
  • Crushed ginger  2 tbsp
  • Green chilies  4
  • Oil  1 cup
  • Butter  1 tbsp
  • Lemons  2
  • Black pepper  1 tsp
  • Salt  to taste

Method:

  1. First wash the chicken chili boneless and put it in clay pot.
  2. Along turmeric, salt, ginger garlic paste and water.
  3. When the water dries add oil, chopped red chili and then roast it.
  4. When the oil starts to separate, add long thin green chilies, chopped ginger, chopped black pepper, lemon juice, butter and simmer it for 5 to 10 minutes.
