Chicken Leaves, Chicken Vegetable & Corn Soup And Indonesian Fish Curry by Chef Zakir

Ingredients for Chicken Leaves:

  • Chicken leg  half
  • Egg  1
  • Baby corn  3
  • Red chilies chopped  3
  • Coriander leaves  1/4 bunch
  • Basil leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Water  1/4 cup
  • Garlic sauce 1 tsp
  • Oyster sauce 2 tbsp
  • Chili garlic sauce  3 tbsp
  • Tomato ketchup  3 tbsp
  • Oil  3 tbsp
  • Corn flour  4 tbsp
  • Oil  for fry
  • Salt and pepper  to taste

Method:

  1. First cut the chicken boneless, then pour salt, black pepper, egg, corn flour and leave it.
  2. After that pour oil marinate the chicken, deep fry it. When it turns to golden color take it out and keep it on a side.
  3. Now pour oil in a pan, add garlic paste, cook it.
  4. Then add chopped coriander, chopped mint, fried curry leaves, baby corns.
  5. After few seconds, add worcestor sauce, chili garlic sauce, chopped red chili, tomato ketchup, salt, black pepper.
  6. Along water mix it well.
  7. Then put the fried chicken, mix it well, heat it on high temperature, then roast it.
  8. In the end serve it with fried rice or boiled rice.

Ingredients for Chicken Vegetable & Corn Soup:

  • Chicken breast 300 gm
  • Chicken bones  300 gm
  • Capsicum 1
  • Carrot  1
  • Egg 1
  • Spring onion  2
  • Cabbage  1/4 piece
  • Sweet corn  1 cup
  • Corn flour  1/2 cup
  • Black pepper 1/4 tsp
  • Oil  3 tbsp
  • Salt  to taste

Method:

  1. Boil the chicken bones.
  2. Now add capsicum, carrot, green onion, cabbage.
  3. Cut the chicken breast in small pieces.
  4. Now pour oil in pan, add chopped chicken, then saute it.
  5. Then add vegetables, sweet corns saute it nicely.
  6. Now put the ready stock of chicken, heat it high.
  7. Then add corn flour make its paste, cook till it becomes thick.
  8. After that add salt, black pepper, beaten egg.
  9. Delicious Chicken vegetable and corn soup is ready.

Ingredients for Indonesian Fish Curry:

  • Fish fillet 1/2 kg
  • Salt  to taste
  • Onion 1
  • Bay leaf  1
  • Cucumber  1
  • Garlic  4 cloves
  • Mint leaves  few
  • Coconut milk  1 cup
  • Tamarind paste  1/2 cup
  • Ginger  1
  • Coriander powder  1 tsp
  • Turmeric  1 tsp
  • Chili powder  1 tbsp
  • Lemon skin  1/2 tsp
  • Oil  4 tbsp

Method:

  1. First add onion, garlic cloves.
  2. Now pour oil in a pan, add chopped onions and garlic. Then cook it for 1 to 2 minutes.
  3. When the onions becomes soft then add chopped red chilies, chopped ginger, turmeric, chopped coriander, chopped lemon skin, curry leaves, salt, tamarind pulp, water cover and cook it.
  4. Now pour oil in a pan, shallow fry the fish pieces. When the golden color appears then take it out.
  5. Then remove its cover and add coconut milk cook it for 1 to 2 minutes.
  6. Now put the fried fish mix it then serve.
