Punjabi Pulao, Punjabi Kebab And Lassi by Chef Gulzar

Ingredients for Punjabi Pulao:

  • Beef  1/2 kg
  • Ginger garlic paste  2 tbsp
  • Onion  2
  • Big cardamom  4-5
  • Fennel seeds 1 tbsp
  • White cumin  1 tbsp
  • Coriander seeds  2 tbsp
  • Cinnamon  2-3 sticks
  • Star anise flower  2-3
  • Clarified butter  1/2 cup
  • Salt  to taste

For Pulao:

  • Rice  1/2 kg
  • Yogurt  1 cup
  • Bay leaves 3
  • Onion (brown) 3
  • Vinegar  2 tbsp
  • Small cardamom  8
  • Black pepper  1 tsp
  • Green chilies  6-8
  • Clarified butter  1/2 cup
  • Salt  to taste

Method:

  1. For making stock and beef: Heat ghee in pan, put onions and fry it.
  2. Now add ginger garlic paste and beef and roast it nicely until beef and ghee is separated.
  3. Now make one bag and put big cardamom, whole fennel, whole coriander, white cumin, star anise flower and cinnamon in bag.
  4. Then bag in pot, add water as required and cook beef until tender.
  5. Now separate stock and beef and waste bag.
  6. For Bhagar: Now add ghee in pot, put onion and make it brown. Take out half onion, spread on tissue paper and leave half onion remain in pot.
  7. Now chopped black pepper, small cardamom, curry leaves and green chilies and roast for 2 to 3 minutes.
  8. Then add beef and beaten yogurt.
  9. When yogurt is roasted and ghee is separated, add stock.
  10. When stock is boiled, add rice, cover it and cook it.
  11. When water of rice dries, put remaining brown onion and vinegar and simmer it.
  12. When it is simmered, dish out and serve with kabab.

Ingredients for Punjabi Kebab:

  • Beef mince  300 gm
  • Boiled chicken peas  100 gm
  • Ginger garlic paste  1 tbsp
  • All spice powder  1/2 tsp
  • Black pepper  1/2 tsp
  • Red chili powder  1/2 tsp
  • Cumin  1/2 tsp
  • Coriander powder  1/2 tsp
  • Green chilies  4-5
  • Green coriander 1/2 bunch
  • Egg  1-2
  • Oil  for fry
  • Salt  to taste
  • Bread slices  as required

Method:

  1. Put beef mince, boiled chick peas, ginger garlic paste, all spice powder, black pepper, red chili powder, cumin, coriander powder, green chilies, green coriander, salt and bread slices in chopper and grind it
  2. Then make kebab of mixture, brush with egg and fry in hot oil.
  3. Kebabs are ready.

Ingredients for Lassi:

  • Yogurt  250 gm
  • Milk  125 gm
  • Sugar  3 tbsp
  • Ice  as required
  • Water  as required

Method:

  1. Put milk, yogurt, sugar, water and ice in blender and blend it.
  2. Now take out ready lassi in serving glass and serve it.
