Dahi Bhindi, Methi Corn Chicken And Malida by Shireen Anwer

Ingredients for Malida:

  • Flour 1/2 kg
  • Ghee 1 cup
  • Salt pinch
  • Almonds grinded 1/2 cup
  • Pistachio grinded 1/2 cup
  • Green cardamom 1 tsp
  • Caster sugar 1 cup

Method:

  1. First, strain flour, put salt and ghee in it and mix well until it appears in shape of bread crumbs.
  2. Now add water and knead it.
  3. Then make portions, roll it and grind it.
  4. Now put caster sugar, chopped almonds, chopped green chilies, mix it and make malida.
  5. Now serve with milk.

Ingredients for Methi Corn Chicken:

  • Fenugreek leaves 1 cup
  • Chicken 1kg or 16 pieces
  • Tomatoes 3 chopped
  • Yogurt 1 cup
  • Salt 1 + 1 tsp
  • Turmeric 3/4 tsp
  • Oil 1/2 cup
  • Ginger garlic paste 2 tbsp
  • Chili powder 2 tsp
  • All spice 2 tsp
  • Sweet corn 1 cup
  • Khoya 1/4 cup
  • Coriander leaves 2 tbsp
  • Fresh cream 3 tbsp
  • Onion 1 cup

Method:

  1. Marinate chicken with yogurt, ginger garlic paste, salt, chilli powder and all spice powder and leave for 1 hour.
  2. Now heat oil and fry onion for frying until soft.
  3. Then add fenugreek leaves, ginger garlic paste, turmeric and chopped tomato and fry it nicely.
  4. Now put remaining chilli powder and salt, fry it nicely and put marinated chicken. Then cover it and cook for 20 minutes until chicken tenders.
  5. Then put sweet corn, coconut, all spice, fresh cream and green coriander.

Ingredients for Dahi Bhindi:

  • Ladyfinger 1/2 kg
  • Black cumin 1 tsp
  • Yogurt 1 cup
  • Gram flour 2 tbsp
  • Green chili 4
  • Salt 1 tsp
  • Oil 1/4 cup
  • Onion 1
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Chili powder 1 tsp
  • Turmeric 1/2 tsp
  • All spice 1/2 tsp

Method:

  1. First wash bhindi nicely and cut from center.
  2. Now put gram flour, salt, black cumin, chili powder, turmeric and all spice and mix it.
  3. Now fill half lady finger with masala.
  4. Now put lady finger in remaining masala and mix it.
  5. Then heat oil in pan and fry lady fingers.
  6. Now heat oil in separate pan and fry black cumin and onion until it color becomes light.
  7. Then put green chilies, turmeric, chili powder, coriander powder, all spice, cumin powder and yogurt and fry it.
  8. Now simmer for 10 minutes.
