Ingredients for Hyderabadi Lagan Gosht:
Undercut 1/2 kg
Yogurt 1 cup
Onion paste 1 cup
Chopped tomatoes 3
Green chilies 4
Fenugreek seeds few
Curry leaves 6-7
Peanuts 8
Oil 1 cup
Tamarind paste 1 cup
Red chili 1 tbsp
Ginger garlic paste 1 tbsp
Poppy seed 1 tbsp
White cumin 1 tbsp
White sesame seed 2 tbsp
Coriander seeds 2 tbsp
Salt to taste
Method:
First, roast poppy seeds, white sesame seed, whole coriander, white cumin and peanut and grind finely.
Now heat oil in one pan and put fenugreek seeds. When fragrance comes, add onions paste and fry until light brown.
Then put meat, put ginger garlic paste and salt and roast it. When water dries, put chopped tomatoes, thick tamarind paste, roasted & grinded masala, green chilies and curry leaves, put in meat lagan, add 1 tbsp oil, cover it and simmer on tawa.
After 10 minutes, delicious lagan gosht is ready. Serve with simple rice.
Ingredients for Dahi Wali Arwi:
Colocasia 1/2 kg
Green chilies 4
Fenugreek seed few
Curry leaves as required
Yogurt 1/2 cup
Oil 1/2 cup
Tamarind paste 1/2 cup
Onion seeds 1 tsp
Carom seeds 1 tsp
Turmeric 1 tsp
White cumin 1 tsp
Crushed cumin 1 tbsp
Red chili flakes 1 tbsp
Salt to taste
Method:
First, wash colocasia nicely and boil with skin. When it is tendered, peel its skin.
Now heat oil in one karahi pan, put fenugreek seeds. When fragrance comes, put boiled colocasia, roasted & crushed white cumin, turmeric, salt, red chili flakes, crushed green chilies, white cumin, curry leaves, onion seeds and carom seeds, roast it lightly, beat yogurt and add in it.
Together put thick tamarind paste and simmer it.
Serve delicious yogurt colocasia with puri.
Ingredients for Paneer Aloo Tikki:
Boiled potatoes 1/2 kg
Cottage cheese 1 packet
Black pepper 1 tsp
Red chili flakes 1 tbsp
Crushed cumin 1 tsp
Mustard powder 1 tbsp
Rice flour 3 tbsp
Lemons 1
Green chilies 3
Chopped coriander 1/2 bunch
Oil as required
Method:
Mash boiled potatoes with fork.
Now mix finely cottage cheese.
Then put red chilies flakes, black pepper, crushed white cumin, chopped green chilies, rice flour, mustard powder and chopped coriander, mix it well and leave for a while.
Now add lemon juice.
Then heat tawa, pour oil in hands and make tikkiyan.
Pour oil on tawa and fry potato tikki. When golden brown in color from both sides, serve potato paneer tikki with tamarind chutney.
