Chilli Cauliflower, Mini Spring Rolls, Puri Walay Aloo And Masala Puri by Shireen Anwe

Ingredients for Chilli Cauliflower:

  • Cauliflower 1/2 kg remove flowers
  • Flour 3 tbsp
  • Corn flour 3 tbsp
  • Salt 1 tsp leveled
  • Soya sauce 2 tbsp
  • Chili sauce 3 tbsp
  • Ketchup 1/2 cup
  • Vinegar 2 tbsp
  • Honey 2 tbsp
  • Green chilies 4 slit length wise
  • Garlic crushed 1 tsp heaped
  • Chopped coriander 2 tbsp
  • Sugar 1 tsp
  • Black pepper 1/2 tsp
  • Crushed red pepper 1/2 tsp

Method:

  1. Mix flour, corn flour and salt. Now add water, mash cauliflower and make batter.
  2. Cut cauliflower in small pieces. Dip every piece in batter, deep fry it in hot oil and do golden brown in middle flame.
  3. Now heat 14/ cup oil and fry chopped garlic and chopped green chilies for 1 minute.
  4. Then add ketchup, vinegar, chili sauce, soya sauce, black pepper, sugar, crushed red pepper and honey and mix it well.
  5. Now put cauliflower and chopped green coriander, mix it well and serve hot.

Ingredients for Mini Spring Rolls:

For Filling:

  • Cabbage 2 cups thinly sliced
  • Carrot 1 thinly sliced
  • Spring onions 2 chopped with leaves
  • Onion 1 sliced
  • Capsicum 1 sliced
  • Ginger 1 inch piece sliced
  • Coriander leaves finely chopped
  • Green chilies 4 chopped
  • Oil  1/4 cup
  • Garlic 1 tsp
  • Salt 1 tsp
  • Black pepper 1/2 tsp heaped
  • Ketchup 2 tbsp
  • Egg 1 beaten with 1 tbsp flour
  • Triangular roll patti 2 dozen

Method:

  1. Cut capsicum, carrot, green onion, onion, capsicum, ginger, green coriander and green chilies into stripes.
  2. Now heat oil and fry onion until soft.
  3. Then put garlic paste, carrot slice and capsicum slice and fry for 2 to 3 minutes.
  4. After that, put cabbage, green onion, chopped ginger, finely chopped green chilies and fry on high flame.
  5. In end, add salt, black pepper, ketchup and finely chopped green coriander, mix it well and take out.
  6. Now fill in roll patti and close it nicely.
  7. Then close with beaten egg and flour paste, fry it and serve hot.

Ingredients for Puri Walay Aloo:

  • Potatoes peeled 1/2 kg
  • Tomatoes 2 blended
  • Onion 1 blended
  • Ginger 1 inch piece
  • Yogurt 1/2 cup
  • Crushed coriander 1-1/2 tsp
  • Cumin seeds 1 tsp
  • Chili powder 1 tsp
  • Salt 1 tsp
  • All spice 1/2 tsp
  • Oil 1/4 cup

Method:

  1. First, peel potatoes, cut into cubes and boil it.
  2. Now put tomatoes, onion, ginger and yogurt in  blender and blend it.
  3. Then heat oil in karahi, put chopped cumin, blended mixture, chili powder, salt and crushed coriander and fry it.
  4. Now put boiled tomatoes and 1 cup water, cover it and cook until gravy remains.
  5. Then garnish with green coriander and crushed coriander and serve with hot puri.

Ingredients for Masala Puri:

  • Wheat flour 1 cup
  • Flour 1 cup
  • Oil 1/4 cup
  • Yogurt 4 tbsp
  • Salt 1/2 tsp
  • Chilli powder 1/2 tsp

For Masala:

  • Sesame seeds  1tbsp
  • Carom seeds 1 tsp
  • Onion seeds 1 tbsp
  • Oil  for deep frying

Method:

  1. For making masala: Mix sesame seeds, carom seeds and onion seeds.
  2. Mix wheat flour, flour, salt, chilli powder and masala in one bowl.
  3. Now add yogurt and oil, mix it nicely, knead with water and make hard dough.
  4. Now leave for 1 hour.
  5. Now make portions of walnut size and leave for 30 minutes.
  6. Now roll it and fry in hot oil.
