Ingredients for Baba Ghanouj:
Brinjal 1/2 kg
Salt to taste
Black pepper powder 1/2 tsp
Tahini sauce 2 tbsp
Lemon juice 2 tbsp
Water 4 tbsp
Parsley chopped 1 tsp
Olive oil 2-3 tbsp
Method:
First, grease brinjal with some oil, and roast in oven on 200 degree C for 10 to 12 minutes.
When is roasted well, take it out, peel it and take out pulp in bowl.
Now put tahini sauce, salt, black pepper, lemon juice, water and olive oil in separate bowl and mix well.
Now add chopped parsley and mashed brinjals, mix it and serve on platter or toast.
Ingredients for Caribbean Grilled Prawns:
Jumbo prawns 1/2 kg
Salt to taste
Garlic paste 1 tsp
White pepper powder 1/2 tsp
Green chili paste 1 tsp
Lemon juice 2 tbsp
Chili sauce 2 tbsp
Worcester sauce 1 tbsp
Chili powder 1 tsp
Crushed black pepper 1 tsp
Mayonnaise 3 tbsp
Carrot 1
Potato 1
Oil as required
Wooden skewers as required
Method:
First, wash jumbo prawns and mark cuts.
Now cut carrots and potatoes into finely slice and keep aside.
Then add, garlic paste, salt, white pepper powder, crushed black pepper, green chili paste, lemon juice, chili sauce, worcestor sauce, mayonnaise and chili sauce, mix well and marinate prawns.
Now skew in wooden skewers and grill on grill pan.
Then mix finely chopped carrot and potato in marination and grill it.
In end, keep grill vegetables with grill prawns on platter and serve.
Ingredients for Cantonese Fried Chicken:
Chicken leg with bones 1/2 kg
Salt to taste
Ginger garlic paste 1 tbsp
White pepper powder 1/2 tsp
Sugar 1 tsp
Chinese salt 1 tsp
Chili powder 1 tbsp
Soya sauce 2 tbsp
Chili garlic sauce 2 tbsp
Egg 1
Flour 4 tbsp
Corn flour 4 tbsp
Spring onion 2-3
Coriander leaves 1/4 bunch
Ginger (Julian) 1 medium piece
Chicken stock 1/4 cup
Oil for fry
Method:
First, cut chicken in small pieces.
Now add chicken, salt, 1/2 tsp sugar, Chinese salt, some white pepper powder, 1/2 tsp chilli powder and soya sauce in one bowl and marinate it.
Now add beaten egg, flour, corn flour and water in this bowl and mix.
Then deep fry these pieces in oil
Now heat oil in separate karahi pan, put ginger garlic paste and cook it.
When its color changes, add remaining sugar, salt, Chinese salt, remaining white pepper powder, remaining chilli powder, ginger Julian, soya sauce and chili sauce, mix it and add in fried chicken.
In end, add green onion and chopped green coriander, mix it and serve.
