Mutter Paneer, Vegetable Nuggets, Beans Masala And Macaroni & Vegetable Baked by Shireen Anwer

Ingredients for Mutter Paneer:

  • Peas 2 cups
  • Cottage cheese 250 gm
  • Onion 2 medium
  • Tomatoes 2 large
  • Ginger chopped 1 tbsp
  • Coriander powder 1 tbsp
  • Cumin 1 tsp
  • Turmeric 1/2 tsp
  • Chili powder 2 tsp
  • Milk 1/2 cup
  • All spice 1/2 tsp
  • Korma masala 1 tbsp
  • Kasoori methi 1 tsp
  • Oil 1/4 cup
  • Salt 1/2 tsp
  • Oil for deep frying

Method:

  1. First, cut cottage cheese into cubes and deep fry in hot oil. Now take it out and keep it aside.
  2. Then put onion, tomatoes, chopped ginger, chopped coriander, cumin, turmeric, chili powder, milk, all spice, korma masala, kasoori methi and salt in blender and blend it.
  3. Now heat oil, put blended mixture and cook for 10 minutes until oil comes up.
  4. Then put peas and water, cover it and cook until peas are tendered.
  5. Now put fried cottage cheese, cook for 10 minutes, put fresh cream on top and serve.

Ingredients for Macaroni & Vegetable Baked:

  • Frozen mixed vegetables 2 cups
  • Cauliflower 1
  • Grated cheddar cheese 1 cup
  • Black pepper crushed  1 tsp
  • Red pepper crushed 1/2 tsp
  • Tiny macaroni boiled 1 cup
  • Salt 1/2 tsp
  • Mushrooms 4

For Herb White Sauce:

  • Butter 2 tbsp
  • Flour 3 tbsp
  • Milk 2 cups
  • Water 1/2 cup
  • Salt 3/4 tsp
  • Crushed black pepper 1/2 tsp
  • Coriander leaves chopped  2 tbsp
  • Mixed herbs 1 tsp
  • Mushrooms 4 sliced

Method:

  1. First, heat oil in one pan, put butter, flour, milk, water, salt, crushed black pepper, chopped coriander, mixed herbs and mushrooms slice and cook until thick.
  2. Then put grated cheese and mix it.
  3. Then put frozen mixed vegetables, mushroom slices, small cauliflower and boiled macaroni and mix it.
  4. Now put this mixture in greased baking dish, sprinkle grated cheese and bake on 180 degrees C for 20 minutes.

Ingredients for Vegetable Nuggets:

  • Boiled and mashed potato 3
  • Carrots 1
  • Peas 1/2 cup
  • Cabbage 1 cup
  • Ginger garlic paste 1 tsp
  • Onion chopped 4 tbsp
  • Salt 1 tsp
  • Black pepper 1/2 tsp
  • Crushed red pepper 1/2 tsp
  • Chat masala 1/2 tsp
  • Lemon juice 1 tbsp
  • Curry leaves 10
  • Coriander leaves 4 tbsp
  • Green chilies 3
  • Oil 2 tbsp
  • Egg 2
  • Bread crumbs as required

Method:

  1. First heat oil and fry chopped onions until soft.
  2. Now put finely chopped curry leaves, boiled & chopped potatoes, cubes of carrot, chopped peas, chopped cabbage, ginger garlic paste, salt, black pepper, crushed red pepper, chat masala, lemon juice, chopped green coriander and chopped green chilies and mix it
  3. Then take out, spread, cut with cutter and dip in eggs.
  4. Now coat with bread crumbs, shallow fry it and serve with ketchup.

Ingredients for Beans Masala:

  • French beans 250 gm
  • Same ki phalli 250 gm
  • Ginger garlic paste 1 tbsp
  • Tomatoes 2 chopped
  • Cumin seeds 1 tsp
  • Chili powder 1 tsp
  • Coriander powder 2 tsp
  • Green chilies  2
  • Curry leaves 15 to 20
  • Black pepper 1 tsp
  • Oil 1/4 cup
  • Salt 3/4 tsp
  • Onion 1
  • Lemon juice 1 tbsp

Method:

  1. First heat oil in karahi pan, add cumin and chopped onion and fry until golden brown.
  2. Now put ginger garlic paste and chopped tomatoes and cook for 5 minutes, until oil is separated.
  3. Then add chili powder, chopped coriander, chopped green chilies and curry leaves and cook for 2 to 3 minutes.
  4. Now put french beans, same ki phali and 1/2 cup water, cover it and cook  on low flame.
  5. In end, put lemon juice and serve.
