Ingredients for Chatpati Masalay Wali Biryani:

  • Beef 1 kg
  • Potato 1/2 g
  • Onion 2
  • Salt 1 tbsp
  • Turmeric 1 tsp
  • Tomato 250 gm
  • Coriander, Mint 1 cup
  • Fried onion 3/4 cup
  • Food color as required
  • Nutmeg Mace 1 tsp
  • Rice 750 gm
  • Ghee 1 cup
  • Ginger garlic paste 2 tbsp
  • Red chilli powder 1 tbsp
  • Whole mix spice 1 tbsp
  • Coriander powder 1 tbsp
  • Yogurt 3/4 cup
  • White cumin 1 tbsp
  • Green chilli 15-20
  • Lemon juice 4 tbsp
  • Kewra essence few drops

For Raita:

  • Yogurt 250 gm
  • Black pepper 1/2 tsp
  • Green chili, Cumin 1 tsp
  • Salt to taste

Ingredients for Deghi Zarda:

  • Rice 600 gm
  • Ghee 1 cup
  • Khoya 250 gm
  • Small cardamom 6-8
  • Clove 4-5
  • Coconut slice as required
  • Sugar 500 gm
  • Yellow color as required
  • Almond, Pistachio 3/4 cup
  • Kewra few drops
  • Red, Green ashrafi 2 tbsp
  • Orange peel 2 tbsp
  • Silver paper for garnish

  • zainabjaseem, when u cook biryani and when its ready, switch off and and using ur spoon or small plate, carefully lift rice and remove steam. This is important. Secondly when u sprinkle biryani color, add it to kewra or milk and then sprinkle. Try watching some shirin anwar, sara riaz biryani videos, that will teach u alot. I dont think chef samina replies here, u can try zauq tv email address for that. Good luck
