Ingredients for Zucchini Brownies:
Butter softened 1 cup
Sugar 1-1/2 cup
Eggs 2
Yogurt 1/2 cup
Vanilla 1 tsp
Flour 2-1/2 cups
Coco powder 3 tbsp
Baking soda 1 tsp
Salt 1/2 tsp
Zucchini peeled 2 cups
Ingredients for Frosting:
Peanut butter 1/2 tsp
Chocolate grated 1/2 tsp
Method:
First, put butter and sugar in one bowl and beat until fluffy.
Now beat eggs in individually in separate bowl.
Then put yogurt, vanilla essence, strain flour, coco powder, baking soda, salt and mix well.
Now add in butter mixture, fold in zucchini, put in greased pan and bake in oven on 180 degrees C for 40 minutes.
For making frosting: Cook grated chocolate and peanut butter until it melts.
Now paste on brownies and serve.
Ingredients for Super Veggie Pizza:
For Pizza Dough:
Flour 2 cups
Egg 1
Salt 1/2 tsp
Sugar 1-1/2 tsp
Oil 1/2 cup
Instant yeast 1-1/2 tsp
Powdered milk 2 tbsp
For Filling:
Pizza sauce 4 tbsp
Onion 1
Capsicum 1 Julian
Sweet corn 1/2 cup
Mushrooms 4 sliced
Jalapenos 2 sliced
Olives 6 sliced
Tomatoes 1 Julian
Cheddar cheese 3/4 cup
Mozzarella cheese 3/4 cup
Oregano leaves 1 tsp
Crushed red pepper 1 tsp
Method:
For making pizza dough: Mix flour, egg, salt, sugar, oil, yeast and dry milk, knead with water and make dough soft. Now leave for 40 minutes to rise.
Then cut into 10 inch round shape and paste on pizza plate.
Now spread pizza sauce and put grated cheddar cheese on top.
Now toast chopped onions, capsicum Julian, sweet corn, mushroom slice, jalapeno slice, olives and tomato Julian on one pan.
Then put on dough, sprinkle again grated mozzarella cheese and grated cheddar cheese and bake for 25 minutes until golden.
Now serve hot.
Ingredients for Pasta In Tomato Sauce:
Any shape boiled pasta 3 cups
Capsicum 1 sliced
Crushed garlic 1 tbsp
Tomato puree 1/2 cup
Ketchup 1/2 cup
Crushed red pepper 1 tsp
Black pepper 1/2 tsp
Mixed herbs 1 tsp
Salt 1 tsp
Cream 1/2 cup
Milk 1/2 cup
Mushrooms 4 sliced
Sweet corn 1/2 cup
Black olives 4 black
Green olives 4 green
Method:
Heat oil in one pan and fry chopped garlic for 2 minutes.
Now put boiled pasta, ketchup, tomato puree, milk, cream, capsicum slices, crushed red pepper, black pepper, mixed herbs, salt, mushroom slices, sweet corns, black olives and green olives in this and toast well.
In end, serve with garlic bread.
Ingredients for Veggie Burger:
Boiled and mashed potatoes 1 cup
Carrot 1 grated
Boiled and mashed peas 1/2 cup
Capsicum 1
Flour 2 tbsp
Salt 1 tsp
Black pepper 1/2 tsp
Crushed red pepper 1/2 tsp
Chili sauce 1 tbsp
Coriander leaves 2 tbsp
Green chilies 2 chopped
Egg 1 beaten
Bread crumbs 1 cup
Burger buns 4
Salad leaves 4
Cucumber 4 sliced
Tomato 4 slices
Ketchup as required
Method:
Mix boiled & mashed potatoes with grated carrots, boiled & mashed peas, capsicum cubes, flour, salt, black pepper, crushed red pepper, chili sauce, chopped green coriander, chopped green chilies, beaten egg and bread crumbs.
Now make patties and shallow fry it.
Then fry burger bun and spread this mixture with mayonnaise.
Now keep salad leaves, veggie patties, cucumber slices and tomato slices.
In end, serve with ketchup and fries.
