Rajasthani Moti Pulao, Chicken Aloo Bukhara Korma And Gobhi Kasoori by Zubaida Tariq

Ingredients for Rajasthani Moti Pulao:

  • Rice 2 cups
  • Raisins 1 cup
  • Clarified butter 1 cup
  • Cottage cheese 2 packets
  • Bread slices 2
  • Chopped onion 4
  • Small cardamom 6
  • Long green chilies 6
  • Boiled almonds 20
  • Yogurt 1/2 tsp
  • Black cumin 1 tsp
  • White cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • Silver paper as required
  • Salt to taste

For Stock:

  • Water 2 cups
  • Garlic 1
  • Onion 1
  • All spices as required
  • Ginger 1
  • Fennel seeds 1 tsp
  • Coriander seeds 1 tbsp

Method:

  1. For Stock: Put water, fennel seeds, chopped coriander, onion, garlic, all spice and chopped ginger in one pot, cook lightly and strain it.
  2. Wash rice and soak it. Also soak raisin in hot water. Mix white cumin, black cumin and small cardamom and grind it.
  3. Mash cottage cheese with fork and mix salt in it. Cut edges of bread, break it, mix in cheese and knead it. Then make small koftas.
  4. Now heat oil in frying pan, shallow fry it until golden brown and fold in silver paper.
  5. Heat ghee in one pot, do onion golden brown, take out and spread it.
  6. Then put yogurt, ginger garlic paste, chopped green chilies, white cumin and small cardamom in ghee and roast it. Now add stock in it. When boiled then, put rice and salt, stir it and cover it. When steam comes up, pulao is ready.
  7. Then take out rice in wide dish. Peel boiled almonds, break in into 2 pieces and fry it. Together fry raisins lightly.
  8. Now put koftay, fried onion, almond and raisin on top and rice and serve hot.

Ingredients for Chicken Aloo Bukhara Korma:

  • Chicken 1
  • Chopped onion 2
  • Small cardamom 3
  • Degi red chilies 4
  • Boiled almonds 15
  • Oil/ clarified butter 1 cup
  • Yogurt 1 cup
  • Plum 2 packets
  • White vinegar 1 tsp
  • White cumin 1 tsp
  • Black cumin 1 tsp
  • All spice powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Coriander seeds 2 tbsp
  • Salt to taste

Method:

  1. Mix white cumin, black cumin and small cardamom and grind it.
  2. Soak plum in hot water.
  3. Put white vinegar in degi red chillies and boil it.
  4. Heat oil in one pot, do chopped onion golden brown,brown, take out and spread on tissue paper so it becomes crispy.
  5. Now put chicken pieces, salt and ginger garlic paste in one pot, dry chicken water and roast it nicely.
  6. Then mix deg red chilies and whole coriander and grind in blender.
  7. When chicken tender, mix with red chili chutney, onion and yogurt and grind it.
  8. Now add all spice powder in chicken and roast well.
  9. Then soft soaked plum with hand. Peel almonds and cut into 2 pieces.
  10. Now put plum, almonds, white cumin, black cumin, chopped cardamom and 1-1/2 cup hot water and simmer on low flame.
  11. When oil come up, then delicious korma is ready.

Ingredients for Gobhi Kasoori:

  • Cauliflower 1
  • Garlic 4 cloves
  • Green chilies 6
  • Oil 1 cup
  • Green coriander1 bunch
  • Turmeric 1 tsp
  • Red chili flakes 1 tbsp
  • Chopped ginger 2 tbsp
  • Kasoori methi 2 tbsp
  • Salt to taste

Method:

  1. Wash flowers of cauliflower separately.
  2. Now heat oil in one karahi pan, put garlic cloves, make it golden brown and add cauliflower.
  3. Together put turmeric and salt and roast well.
  4. After that, put kasoori methi, chopped ginger, chopped green chilies and red chili flakes and simmer for 5 minutes.
  5. In end, put chopped ginger and chopped green coriander and serve with hot chapati.
