Masaleydar Lobia, Dry Baked Chicken And Brain Cutlets by Chef Zakir

Ingredients for Masaleydar Lobia:

  • White beans 1 cup
  • Kidney beans 1 cup
  • Salt to taste
  • Ginger garlic paste 1 tbsp
  • Onion 1
  • Boiled tomatoes 3
  • Chili powder  1 tbsp
  • Turmeric 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Green chilies  2-3
  • Coriander leaves 1/4 bunch
  • Yogurt 125 gm
  • All spice powder 1/2 tsp
  • Nutmeg & mace powder 1/2 tsp
  • Oil 1/4 cup

Ingredients for Dry Baked Chicken:

  • Chicken breast 2
  • Salt to taste
  • Garlic 2-3 cloves
  • Lemon juice 3 tbsp
  • Onion chopped 2
  • Green capsicum 1
  • Big green chilies 4-5
  • Tineed mushroom 1/2 cup
  • Cumin seeds 1/2 tsp
  • Red capsicum 1
  • Red pepper 1 tsp
  • Tomato paste 2 tbsp
  • Coriander leaves 1/4 bunch
  • Cheddar cheese 50 gm
  • Mozzarella cheese 50 gm
  • Oil 2-3 tbsp

Method:

  1. First, cut onions, capsicum, big green chilies, tinned mushroom and red capsicum in long.
  2. Now marinate chicken breast with garlic cloves, salt and lemon juice.
  3. Then heat grill pan, grill chicken from both sides and cut into strips.
  4. Now add chicken, all vegetables, cumin seeds, slice mushroom, tomato paste, salt, chopped green chilies, red pepper and chopped green coriander and mix it.
  5. Then sprinkle grated cheddar cheese and mozzarella cheese on top and bake on preheated oven on 180 degrees C for 8 to 10 minutes.
  6. When golden, take out and serve.

Ingredients for Brain Cutlets:

  • Mutton brain 3-4
  • Salt to taste
  • Ginger garlic paste 1 tbsp
  • Turmeric 1/2 tsp
  • Black pepper 1/2 tsp
  • Green chilies 2-3
  • Coriander leaves 1/4 bunch
  • Egg 2
  • Semolina 125 gm
  • Onion chopped 1
  • Gram flour 2 tbsp
  • Flour 3 tbsp
  • Peas 1/2 cup
  • Oil for fry
  • Water1 cup
