Balochi Machli, Herb & Cheese Quiche And Chicken Brown Karahi by Chef Zakir

Ingredients for Balochi Machli:

  • Fish 1/2 kg
  • Salt to taste
  • Red pepper 1 tbsp
  • Chili powder 1 tsp
  • Lemon juice 2 tbsp
  • Garlic paste 1 tbsp
  • Turmeric 1 tsp
  • Crushed cumin 1 tbsp
  • Fennel seed 1 tbsp
  • Carom seeds 1 tsp
  • Ginger garlic paste 1 tbsp
  • Green chilies 4-5
  • Coriander leaves 1/4 bunch
  • Mint leaves 1/4 bunch
  • Vinegar 4-5 tbsp
  • Flour 2-3 tbsp
  • Oil 1/4 cup

Method:

  1. First make paste of green coriander, green chilies and chopped mint with vinegar and take out in bowl.
  2. Now add crushed cumin, fennel seeds, carom seeds, garlic paste and ginger paste and mix well.
  3. Now add turmeric, red pepper and flour, add water, chili powder and lemon juice and mix it.
  4. Now marinate fish fillet and shallow fry in pan.
  5. Balochi fish is ready.

Ingredients for Herb & Cheese Quiche:

  • Cream cheese 1/2 cup
  • Flour 250 gm
  • Baking powder 1 tsp
  • Egg 2
  • Milk 125 ml
  • Almond ground 100 gm
  • Black pepper 1/2 tsp
  • Red capsicum 1
  • Oregano 1 tsp
  • Butter 5 tbsp
  • Cheddar cheese 100 gm
  • Parsley chopped 1/4 bunch
  • Salt to taste

Method:

  1. First mix butter, baking powder and cream cheese nicely in one bowl. When it is mixed well, add flour and salt.
  2. When dough is ready, roll it and spread in small cake tray or quiche tray.
  3. Mix red capsicum, chopped parsley, egg, milk, chopped almonds, oregano, black pepper and cheddar cheese well.
  4. When mixture is ready,  spread on quiche tray and bake on 180 degrees C for 20 to 25 minutes. Take out when golden, cut into pieces and serve.

Ingredients for Chicken Brown Karahi:

  • Chicken 1/2 kg
  • Salt to taste
  • Ginger garlic paste 2 tbsp
  • Onion 2
  • Turmeric 1 tsp
  • Black pepper 1 tbsp
  • Green chilies 4-5
  • Coriander leaves 1/4 bunch
  • Cumin seeds 1 tbsp
  • Coriander seeds 1 tbsp
  • Ginger 1 medium piece
  • Yogurt 250 gm
  • Ghee 1/4 cup

Method:

  1. First heat oil in karahi pan and do onion red.
  2. When onions becomes red, add ginger garlic paste and chicken and cook until chicken color changes.
  3. Then add coriander seeds, cumin seeds, black pepper and yogurt, mix well and leave for cook.
  4. Remove its cover for 12 to 15 minutes, add green chilies, green coriander and chopped ginger, roast for 1 to 2 minutes and serve.
