Ingredients for Amritsari Bhuni Arhar Ki Daal:
Black lentil 1 cup
Green coriander chopped 1 bunch
Onion chopped 1
Tomato chopped 2
Green chilies chopped 5
Dry mango 1 tsp
All spice powder 1 tsp
Turmeric powder 1tsp
White cumin crushed 1 tsp
Ginger chopped 2 tbsp
Oil 3 tbsp
Red chili powder 1/2 tbsp
Salt to taste
Method:
Wash gram lentil with lukewarm water and soak it.
Then put lentil in lukewarm water and boil with turmeric.
When it is tendered well, strain its water.
Heat oil in one pot and do chopped onions light pink.
Then put red chili powder, crushed green chilies, chopped tomatoes and chopped ginger and roast it.
When water of tomatoes dries, add lentil, roast again and simmer it.
Then put all spice powder and chopped green coriander and simmer it.
When steam comes up, serve daal with hot chapati.
Ingredients for Creamy Minced Cutlets:
Minced beef 1 kg
Egg 1
Bread slices 2
Chopped green chilies 4
Fresh milk 1/2 liter
Bread crumbs 1 packet
Chopped coriander 1/2 bunch
Black pepper powder 1 tsp
Butter 1 tbsp
All purpose flour 3 tbsp
Oil as required
Salt to taste
Method:
Put salt in mince and cook in water.
When water dries, mix bread slice and grind in chopper.
Put butter in one pot and roast all purpose flour.
Then cool all purpose flour, put milk, make thick white sauce and mix in mince.
After that, mix green chillies, chopped coriander and black pepper powder, make small small cutlets, dip in eggs, coat with bread crumbs and fry it.
Delicious creamy minced cutlets is ready.
Ingredients for Tikka Pulao:
Rice 2 to 2-1/2 cup
Yogurt 1 cup
Oil 1 cup
Chicken 1
Lemons 3
Crushed cardamom 4
Green chilies 4
Chopped onion 4
Crushed black pepper 1 tsp
Ginger garlic paste 1 tbsp
Chicken tikka masala 2 tbsp
Red chili flakes 1/2 tbsp
For Stock:
Chicken bones 1/2 kg
Garlic 1
Ginger 1 piece
Onion 1
All spice as required
Water 2-3 cups
Fennel seeds 1 tsp
Coriander seeds 1 tbsp
Salt to taste
Method:
Put water, chicken bones. fennel seeds, whole coriander,
onion, garlic, ginger, all spice and salt in one pot,, cook it and then strain it.
Then heat oil in one pot, do chopped onions golden brown and take out.
Then put 1/2 cup yogurt, ginger garlic paste, chopped small cardamom and green chilies in oil and roast it lightly.
Then mix chicken tikka masala, lemon juice, red
chili flakes, 1/2 cup yogurt, salt and crushed black pepper in chicken, dry its water and keep it aside.
Now put stock in pot. When it boils, take out water of rice, add rice and salt, stir it and cover it.
When water dries, keep on simmer.
Now fry dry masala chicken in individual pan and do golden brown.
Before serving, take out pulao in dish, keep chicken on top and put fried onion.
Delicious tikka pulao is ready.
