Chinioti Steam Chicken, Buffalo Chicken Wings And Chocolate Mousse by Chef Zakir

Ingredients for Chinioti Steam Chicken:

  • Whole chicken  1 kg
  • Ginger garlic paste  2 tbsp
  • Chili powder  1 tbsp
  • All spice powder  1 tsp
  • Coriander powder  1 tsp
  • Cumin powder  1 tsp
  • Thick yogurt  250 gm
  • Vinegar  1 cup
  • Chaat masala  1 tbsp
  • Red food color  few drops
  • Lemon juice  2-3 tbsp
  • Oil  for fry
  • Salt  to taste
  • Muslin cloth  as required

Method:

  1. First mark cut i chicken. Now put salt and vinegar in one bowl and marinate chicken nicely.
  2. When color of chicken changes, deep fry until golden brown. When  golden color, take it out.
  3. Now add water, yogurt, chili powder, coriander powder, cumin powder, all spice powder and salt in one bowl and mix it well.
  4. Then paste masala on chicken nicely and steam chicken for 20 to 25 minutes.
  5. Now take out, put it in platter, sprinkle chaat masala and lemon juice and serve.

Ingredients for Buffalo Chicken Wings:

  • Chicken wings  1/2 kg
  • Salt  to taste
  • Garlic paste  1 tsp
  • Black pepper  1/2 tsp
  • Flour  125 gm
  • Chili powder  1 tsp
  • Tabasco sauce  2 tbsp
  • Chili garlic sauce  2 tbsp
  • Butter  2 tbsp
  • Oil  for fry

Method:

  1. First put the flour, chili powder and salt and mix well.
  2. Now wash chicken wings nicely and cut edges. Then coat nicely with flour, deep fry in hot oil, when golden color, take out and keep it aside.
  3. Now mix butter, tabasco sauce and chili garlic sauce.
  4. Together add chopped black pepper, garlic paste and salt and mix it all.
  5. Now heat in individual pan, now coat fried chicken wings with sauce and serve.

Ingredients for Chocolate Mousse:

  • Cooking chocolate  200 gm
  • Egg  3
  • Icing sugar  100 gm
  • Fresh cream 200 gm

Method:

  1. First separate egg white and egg yolk. Then beat egg white until foam.
  2. Then put egg yolk and mix it again.
  3. Now put fish cream and icing sugar and beat well. When cream becomes thick, keep it aside.
  4. Melt cooking chocolate in double boiler by steam. When chocolate becomes soft, remove from stove and cool it.
  5. Now add beaten cream and melted chocolate and fold it.
  6. Now put mixture in separate glass or serving bowls and keep in freezer to chill it. When it is nicely cooled and serve to guest.
