Ingredients for Kungpao Broccoli Chicken:
Oil 1 tbsp
Broccoli, cut in florets 1
Ginger ground 1 tbsp
Water 2 tbsp
Crushed red chilies 1/2 tsp
Boneless chicken breast 1 kg
Chicken stock 1/2 cup
Hoisin sauce 2 tbsp
Soya sauce 2 tbsp
Corn flour 1 tsp
Garlic, crushed 4 cloves
Salted peanuts chopped 2 tbsp
Method:
Heat oil in a large pan and add broccoli and ginger to pan, saute 1 minute.
Add water.
Cover, cook it for 2minutes or until broccoli is crisp-tender.
Remove broccoli from pan, keep warm.
Heat remaining oil in pan, add remaining ginger crushed red chilies, and chicken.
Cook until chicken is lightly browned, stirring frequently.
Combine stock and hoisin sauce, soya sauce, corn flour and garlic in a small bowl, and stir with a whisk.
Add stock mixture to pan, cook 1 minute or until mixture thickens, stirring constantly.
Return broccoli mixture to pan to coat.
Sprinkle with peanuts.
Ingredients for Manchow Soup:
Button mushrooms 2-3
Carrot, chopped 1 medium
Cabbage, chopped 1/4 small
Chinese black mushrooms 2-3
Green capsicum 1/2 medium
Spring onion 1
Oil 2 tbsp
Ginger 1/2 inch piece
Garlic chopped 2-3 cloves
Bamboo shoots 2 inch
Vegetable stock 4 cups
Green chili 2
Red chili sauce 1/2 tbsp
Soya sauce 2 tbsp
Tofu 50 grams
Corn flour 3 tbsp
Salt to taste
Noodles, deep fried 1 cup
Method:
Slice spring onion.
Heat oil in a non stick wok.
Slice button mushrooms.
Add spring onion to the oil in the wok along with ginger and garlic and toss.
Add carrot, cabbage and mushrooms.
Chop Chinese mushrooms roughly and add to the wok.
Chop bamboo shoot into small pieces.
Add 4 cups stock and green chilies to the wok.
Add red chili sauce and soya sauce and mix.
Cut tofu into 1/2 inch cubes and add to the soup.
Mix corn flour with 1/4 cup water and add to the soup and cook till it thickens.
Add salt and mix.
Chop capsicum, reserve some for garnish and add the rest to the soup and mix well.
Serve the soup hot garnished with crisp noodles and capsicum.
Ingredients for Spicy Orange Beef:
Corn flour 1/3 cup
Salt 1/2 tsp
Beef undercut 250 gm
Vegetable oil a little
Sesame oil 1 tbsp
Garlic, crushed 1 clove
Minced fresh ginger 1 1/2 tsp
Red chilies crushed 1 1/2 tsp
Vinegar 1 tbsp
Orange juice 1/2 cup
Orange marmalade 2 tbsp
Soya sauce 1 tbsp
Method:
In a large bowl, mix together flour and salt.
Add beef toss to coat, shake off any excess.
In a large pan, heat vegetable oil.
Add beef and fry until borrowed on all sides, about 5 minutes.
Using a slotted spoon, transfer beef to a coriander.
Add sesame oil, garlic and ginger to pan and cook for 1 minute over medium heat.
Stir in crushed red chilies. orange juice, marmalade, soya sauce and vinegar and cook until slightly syrupy.
Reduce heat to medium and stir in beef to coat with orange sauce.
Heat through and serve.
Ingredients for Sesame Oil Wings:
Chicken wings 1 kg
Water 1 1/ 4 cups
Soya sauce 1/2 cup
Garlic crushed 1 clove
Spring onion, chopped 1
Sesame oil 1/4 cup
Method:
Combine the chicken wings, water, soya sauce, garlic and green onion.
Stir together and cook for 15 minutes over medium heat.
Add the 1/4 cup sesame oil and simmer for another 15 minutes over low heat.
Bring mixture to a boil, let cook and serve.
