Egg Fried Rice, Honey Chicken, Kindo Prawns And Sesame Oil Wings by Zarnak Sidhwa

Ingredients for Kindo Prawns:

  • Prawns  1/2 kg
  • Salt  1/4 tsp
  • White pepper  1/4 tsp
  • Baking powder  1/2 tsp
  • Egg  1
  • Cornflour  2 tbsp

For Stock:

  • Leeker spring onion  1
  • Tomato  1
  • Celery   1 stalk
  • Carrot  1
  • Water  1 cup

For Sauce:

  • Chili garlic sauce  3 tbsp
  • Ketchup  2 tbsp
  • Sugar  2 tbsp
  • HP sauce  1 tbsp
  • Salt  1/4 tsp
  • Worcestershire sauce  1 tbsp
  • Red food color  few drops

Before Serving:

  • Oil  1 tbsp
  • Carrot 1
  • Onion, sliced  1
  • Garlic, chopped  2-3 cloves

Method:

  1. Marinate prawns with salt, pepper, baking powder, salt and add in egg and corn flour and set aside for a while.
  2. Heat oil and deep fry till crispy.
  3. Boil carrot, leek, tomato and celery and when vegetables are done strain, add ketchup, sugar, HP sauce, salt, worcestershire sauce, chili garlic sauce and a little red color, mix, lastly thicken with corn flour paste.
  4. Set sauce aside.
  5. Before serving, heat oil, add crushed garlic, saute add sliced onion, carrots and mix in sauce, let boil and fold in the prawns and serve with greens of spring onions.

Ingredients for Sesame Oil Wings:

  • Chicken wings  1 kg
  • Water  1 1/4 cups
  • Soya sauce  1/2 cup
  • Garlic crushed  1 clove
  • Spring onion, chopped  1
  • Sesame oil  1/4 cup

Method:

  1. Combine the chicken wings, water, soya sauce, garlic and green onion.
  2. Stir together and cook for 15 minutes over medium heat.
  3. Add the 1/4 cup sesame oil and simmer for another 15 minutes over low heat.
  4. Bring mixture to a boil, let cool and serve.

Ingredients for Honey Chicken:

  • Boneless chicken  1 kg
  • Oil  for deep frying

For Batter:

  • Corn flour  4 tbsp
  • Flour  1/4 cup
  • Baking powder  1 tsp
  • Water  1/2 tsp
  • Salt  1/2 tsp
  • Egg  1
  • Egg white  1

For Sauce:

  • Oil  1-1/2 tbsp
  • Ginger  2 tbsp
  • Garlic  3 tbsp
  • Salt  1 tsp
  • Honey  3 tbsp
  • Vinegar  1 tsp
  • Water  1/2 tsp
  • Cornflour  1 tsp
  • Water  1 tsp
  • Sesame seeds  for garnish

Method:

  1. In a large bowl mix all batter ingredients together until smooth.
  2. Cover and allow the batter to sit for at least 30 minutes.
  3. Add the chicken to the batter tossing to coat.
  4. Heat oil and fry chicken.
  5. Drain on paper towels.
  6. To make the sauce.
  7. Heat 1-1/2 tbsp of oil in your wok.
  8. Add garlic and ginger and stir fry for 30 seconds
  9. Add salt, honey, vinegar, and water.
  10. Mix well. Combine 1 tsp of water with 1 tsp of cornflour.
  11. Add to the sauce and simmer for 2 minutes.
  12. Coat chicken with the sauce and garnish with sesame seeds.
  13. Serve with fried rice.

Ingredients for Egg Fried Rice:

  • Egg  1
  • Sesame oil  2 tsp
  • Vegetable oil  2 tbsp
  • Cooked rice  3 cup
  • Peas  1/2 cup
  • Spring onions  4
  • Bean sprouts  1 cup
  • Soya sauce  1-2 tsp
  • Ground white pepper  to taste

Method:

  1. Beat the egg and sesame oil in a small bowl
  2. Heat the vegetable oil in a large frying pan.
  3. Add the rice and stir for 3 to 4 minutes, until completely heated through.
  4. Add the peas, spring onion and beans sprouts, Stir fry for about 3 minutes, turning the rice constantly.
  5. Season well with soya sauce and pepper, then push to one side of the pan.
  6. Pour the beaten egg on the other side of the pan and leave for about 10 seconds to set.
  7. Using a chopstick, stir around the egg to break it up and then toss around with the rice.
  8. Stir fry for a further minute and serve.
