Bolognese Turnovers, Chocolate Velvet Cake And Dilkash Chops by Shireen Anwer

Ingredients for Bolognese Turnovers:

  • Oil 3 tbsp
  • Onion  1 chopped
  • Garlic paste 1/2 tsp
  • Beef mince  250 gm
  • Tomato paste 2 tsp
  • Pasta sauce  2 tbsp
  • Salt  1/2 tsp
  • Black pepper  1/2 tsp
  • Red pepper  1/2 tsp
  • Coriander leaves  2 tbsp
  • Green chilies  2 chopped
  • Egg  1 lightly beaten

For Short Crust Pastry:

  • Flour 8 ounces
  • Butter  4 ounces
  • Sugar  1 tsp
  • Salt  1/2 tsp
  • Egg  yolk 1
  • Chilled water  to knead

Method:

  1. First heat oven to 180 degree C and grease oven.
  2. Now heat oil in one pan and fry onion and garlic until color of onion changes.
  3. Then put mince, salt, black pepper, red pepper, tomatoes paste, pasta sauce and cook well until mince is tendered.
  4. Now remove from stove, put green coriander and green chilies, mix it and  cool it.
  5. For making short crust pastry: Put short crust pastry, flour, butter, sugar, salt, egg yolk and cold water in one bowl, mix well and knead it.
  6. Now roll dough and cut with cutter.
  7. Now fill with little beef mixture, brush sides with water, fold from center and seal it.
  8. Then keep turnover in baking tray, brush with eggs and bake for 15 minutes.
  9. Then serve with ketchup.

Ingredients for Dilkash Chops:

  • Chops  1/2 kg
  • Ginger garlic 1 tsp
  • Chili powder  1 tsp
  • Salt  1 tsp
  • Turmeric  1/4 tsp
  • Oil  1/4 cup
  • Onion chopped  4 tbsp
  • Tomato paste  2 tbsp
  • Ketchup  1/4 cup
  • Sugar  1/2 tsp
  • Chili garlic sauce  2 tbsp
  • Mayonnaise  2 tbsp

Method:

  1. Heat oil in one pan and fry onion until its color changes.
  2. Now put ginger garlic paste, chops, salt, chili powder and turmeric and fry it.
  3. Then add water, cover it and cook until chops are tendered well.
  4. In end, put tomatoes, ketchup, chili garlic sauce, sugar and mayonnaise and cook until gravy becomes thick.
  5. Then serve with fries.

Ingredients for Chocolate Velvet Cake:

  • Butter  5 ounces
  • Brown sugar  1 cup
  • Caster sugar  1/2 cup
  • Eggs  3
  • Flour  2 cups
  • Coco powder  4 tbsp
  • Soda by carbonate  1 tsp
  • Sour cream  2/3 cup
  • Water  1/2 cup

For Chocolate Glaze:

  • Chocolate  100 gm
  • Butter chopped  2 1/2 ounce
  • Icing sugar  1/2 to 3/4 cup
  • Sour cream  1/4 cup

Method:

  1. First heat oven to 180 degree C and grease baking pan.
  2. Now put butter, brown sugar, caster sugar, egg, flour, coco powder, soda by carbonate, cream and water in one bowl and beat until all ingredients are mixed well.
  3. Now put this mixture in baking pan and bake for 45 minutes.
  4. Now cool for 10 minutes.
  5. Now for making glazed icing: Cook chocolate, butter and icing sugar in one pan.
  6. Now take out, cool it, keep in refrigerator for 20 minutes until icing is set well.
  7. Then paste on cake and serve.
