Mutton Kunna, Kashmiri Pulao, Masoor Ki Kashmiri Daal And HP Sauce by Rida Aftab

Ingredients for Mutton Kunna:

  • Mutton 1 kg
  • Onion chopped 1 large
  • Ghee 1 cup
  • Wheat flour 1/2 cup
  • Water 1/4 cup
  • Ginger garlic paste 1 tbsp
  • Turmeric 1/4 tsp
  • Black cumin 2 tsp
  • Chili powder 3 tsp
  • Coriander powder 1-1/2 tsp
  • Salt  1-1/2 tsp
  • Mix dry fruit  1 cup
  • Yogurt  250 gm

Method:

  1. First, heat ghee in handi and fry chopped onions.
  2. Now put mutton, ginger garlic paste, 3 cups water, chili powder, coriander powder, salt, turmeric and yogurt and roast well.
  3. Now add 4 cups water water, cover and cook until mutton tendered and paste kneaded flour on sides.
  4. Cook for 1 hour.
  5. Then dissolve wheat flour in water, make paste and put it.
  6. In end, put black cumin, cover it and cook it until the ghee comes up.
  7. Then put dry fruits on top.
  8. Delicious mutton kunna is ready.

Ingredients for Kashmiri Pulao:

  • 1/2 kg rice
  • 2 apples
  • 2 carrots
  • 1 kg beef undercut
  • 1 onion
  • 1 tbsp crushed black pepper
  • 2 tsp salt
  • 50 grams butter
  • 1 bunch coriander
  • 2 tsp cumin
  • 1 tbsp ginger garlic paste
  • 1/2 cup oil
  • 1 cup dry fruits

Method:

  1. Soak rice for 30 minutes. Heat oil and do onion brown.
  2. Now put beef undercut and ginger garlic and roast it.
  3. When golden brown, put 3 glass water and cook it.
  4. When water remains to 2 glass, cut carrot and apple and put in it.
  5. Together add salt and cumin. Cook 10 minutes more.
  6. Now put rice and cook it.
  7. When simmered, put crushed black pepper, butter, dry fruit and green coriander and simmer for 15 minutes.

Ingredients for Masoor Ki Kashmiri Daal:

  • Black lentils 250 grams
  • 3 tomatoes
  • 4 green chilies
  • 2 tbsp coriander
  • 1/2 tsp cumin
  • 1 tsp red chili powder
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1/2 cup oil
  • 1 cup mixed dry fruits

Method:

  1. First, soak black lentil for half an hour.
  2. Now put 2 glass water and cook on low flame. When tendered, mash it nicely.
  3. First, put, tomato, chili powder, salt, turmeric and cumin in black lentil and mash it
  4. After that, put green chilies and coriander and remove from stove.
  5. In end, heat oil and give tarka of dry fruits.

Ingredients for HP Sauce:

  • 1 cup water
  • 1 cup black vinegar
  • 1 cup tomato paste
  • 1/2 cup orange juice
  • 6 black dates
  • 3 tbsp apple juice
  • 1/2 cup tamarind pulp
  • 1/2 cup blended onion
  • 1/2 tsp clove powder
  • 1 tsp black pepper
  • 1/2 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp salt

Method:

  1. Mix water, black vinegar, chopped tomato paste, orange juice, black dates, apple juice, tamarind pulp, blended onions, clove powder, black pepper,  cinnamon, garlic powder, mustard powder and salt and cook until it becomes thick.
  2. Now chill it, fill in bottle and use it.
