Ingredients for Persian Rice:
Rice 300 gm
Mutton 1/2 kg
Chopped onion 2
Chopped garlic 1 1/2 tbsp
Potatoes 2-3
Crushed black pepper 1 tsp
White pepper 1 tsp
Chicken cube 1
Saffron 1 pinch
Bay leaves 4-5
Butter 1/2 cup
Oil 2 tbsp
Salt to taste
Boiled pistachio to garnish
Method:
Pour oil in a pan, add curry leaves in a pan.
Now add rice, water boil and filter it, keep it on a side.
For making beef, add butter, pour oil, garlic, chopped onions for frying.
Now add beef for roasting, then add chopped black pepper, white pepper, chicken cubes, curry leaves, salt mix it well till the beef tenders.
Now put the butter, oil add potatoes and spread it, then add rice, beef, saffron then simmer it.
When they are simmered well dish out it and garnish it with pistachio then serve.
Ingredients for Kabab Koobiedeh:
Beef mince 1/2 kg
Garlic paste 1 tbsp
Onion 2
Tomato 2-3
Crushed black pepper 2 tsp
Egg white 1
Bread slices 2-3
Oil as required
Salt to taste
Method:
Put the salt, beef mince, chopped black pepper, egg white, onion, garlic paste, bread slice make the paste.
Now paste it on BBQ icing, then grill it, fry and steam it or bake it in oven.
Put the remaining black pepper, salt, tomato mix it well then grill the tomato.
In the end take out the dish then serve.
Ingredients for Irani Zafrani Kheer:
Milk 1/2 kg
Sugar 1/2 cup
Crushed small cardamom 1/2 tsp
Kewra essence few drops
Corn flour 2-3 tbsp
Saffron 1 pinch
Almonds to garnish
Method:
Pour milk, sugar and boil it.
Saturate the sugar, chopped small cardamom, few drops of kewra essence, mix it well.
Now add corn flour, mix and cook it well so that the mixture becomes thick.
Then dish out, garnish with almonds and saffron and serve.
