Chicken Haleem, Mutton Tikka And Carrot Delight by Chef Zakir

Ingredients For Chicken Haleem:

  • Chicken boneless  1/2 kg
  • Whole wheat  375 gm
  • Gram lentil  125 gm
  • Rice  50 gm
  • White lentils  50 gm
  • Ginger garlic paste  2 tbsp
  • Salt  to taste
  • Onion 1
  • Chili powder  1 tbsp
  • Turmeric  1 tsp
  • Coriander powder  1 tbsp
  • Cumin powder  1 tsp
  • Yogurt  250 gm
  • All spice powder  1 tsp
  • Green chilies  3
  • Coriander leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Ginger  1 piece
  • Brown onion  as required
  • Lemon  1-2
  • Ghee 1/2 cup

Method:

  1. First keep the whole wheat, gram lentil, white lentils, rice in water and leave it for 2 hours.
  2. After 2 hours boil it in a pan, with water on low temperature.
  3. Now pour oil in a pan, add ginger garlic paste, onions and make it soft.
  4. Then add chopped red chili, chopped coriander, turmeric, chopped cumin, chopped garam masala, cook it for 1 to 2 minute.
  5. Then add the boneless chicken and cook it for 1 to 2 minutes.
  6. Now pour water, salt, cover and let it cook on low temperature. Till half hour and and is tendered well and add wheat flour to tender and beat the chicken well.
  7. Then beat the wheat flour, when they are beaten well then add chicken mixture and beat it continuously, until the chicken become soft.
  8. Now take out the haleem in a dish and garnish it with some green coriander, brown onion, lemon then serve.

Ingredients For Carrot Delight:

  • Carrot delight  1/2 kg
  • Sugar  250 gm
  • Milk  1/2 liter
  • Spaghetti boiled  1/2 packet
  • Condensed milk  100 ml
  • Khoya 125 gm
  • Cardamom powder  1/4 tsp
  • Almond chopped  25 gm
  • Pistachio chopped  25 gm
  • Dry dates chopped  4-5
  • Kewra  2 tbsp

Method:

  1. First pour water, grated carrots, boil it.
  2. Then take out from water.
  3. Now pour hot milk, sugar, kewra, boiled carrots.
  4. Then add condensed milk, chopped cardamom, chopped almonds, pistachios cook it on low flame
  5. Then add boiled spaghetti, khoya mix it well.
  6. Serve it hot or cold when it becomes ready.

Ingredients For Mutton Tikka:

  • Mutton  1/2 kg
  • Ginger garlic paste  1 tbsp
  • Thick yogurt  125 gm
  • Turmeric  1/2 tsp
  • Chili powder  1 tbsp
  • Cumin powder  1 tsp
  • All spice powder  1/2 tsp
  • Nutmeg mace powder  1/4 tsp
  • Lemon juice  1 tbsp
  • Salt  to taste
  • Oil  3-4 tbsp
  • Papaya paste  3 tbsp
  • Coriander leaves  1/4 bunch
  • Oil  3-4 tbsp

Method:

  1. First cut the mutton into long slices.
  2. Now pour salt, ginger garlic paste, papaya paste for marination.
  3. Then add water, yogurt, chopped red chili, chopped cumin, garam masala, nutmeg mace, salt, green coriander, lemon juice and leave it for half an hour.
  4. Then pour oil in a pan put the marinated mutton, fry it for 2 to 3 minutes, cover and let it be on simmer.
  5. Remove its cover for 10 to 12 minutes, keep it on low flame, dry its water.
  6. Delicious mutton tikka is ready.
