Chili Chicken Tomato Pulao, Achari Tenda Gravy And Punjabi Kheer by Rida Aftab

Ingredients For Achari Tenda Gravy:

  • Round gourd  1 kg
  • Tomato  250 grams
  • Turmeric  1 tsp
  • Salt  1 tsp
  • Black pepper  2 tsp
  • Chopped garlic  1 tsp
  • Water  2 cup
  • Oil  1/2 cup
  • Curry leaves 6
  • Round red chilies  6
  • Chopped ginger  1 tbsp
  • Mustard seeds  1 tsp
  • Onion seeds  1 tsp
  • Fennel seeds  1 tsp
  • Fenugreek  1 tsp

Method:

  1. Cut the round gourd, tomato, turmeric, salt, chopped black pepper, leave it to cook.
  2. When the water dries, then turn off the stove.
  3. For making achari tarka: Pour oil add curry leaves, red chilies, ginger garlic paste, mustard seeds, fenugreek seeds, fennel seeds and onion seeds.
  4. When it starts to smell then add round gourd, simmer it for 5 minutes then turn off the stove.

Ingredients For Chili Chicken Tomato Pulao:

  • Whole chicken  1
  • Rice  1 kg
  • Tomato  1/2 kg
  • Green chilies  50 grams
  • Fennel seeds  2 tbsp
  • Star anise  10
  • Ginger 1 piece
  • Garlic  1 piece
  • Black cumin  2 tsp
  • Black pepper  2 tsp
  • Mint  1 bunch
  • Oil  1 cup
  • Onion  2

Method:

  1. Pour water, chicken, tomato, green chilies, salt, ginger garlic let it cook.
  2. When the chicken is tendered then filter it, grind the filtered masala.
  3. Then pour oil, add onions make them golden brown.
  4. Now pour oil add onions make them golden brown.
  5. Now add whole red chili, black pepper, black pepper put it in a grinded masala roast it again.
  6. Then add stock, chicken, let it cook.
  7. When it is tendered then add fennel seeds, star anise.
  8. In the end garnish it with green coriander and simmer it for 10 minutes.

Ingredients For Punjabi Kheer:

  • Milk 1 liter
  • Boiled rice  1 cup
  • Vermicelli 1 cup
  • Khoya  1 cup
  • Sugar  1/2 cup
  • Butter  50 gm
  • Almonds, peanuts 1/2 cup
  • Condensed milk  1 cup
  • Cardamoms  as required

Method:

  1. Put the butter in a pan, vermicelli in a pan for frying.
  2. Now pour milk in a pan, heat the milk. When it is boiled then add rice in a grinder.
  3. Along fried vermicelli, few drops of cardamom, cook it well so that it becomes thick.
  4. Then add condensed milk, khoya.
  5. After that add almonds, pistachio and walnuts for serving.
