Ingredients For Chinioti Paye Kunna:
Mutton 1/2 kg
Mutton trotters 2
Chopped onion 2
Kunna masala 1 tbsp
Ginger garlic paste 2 tbsp
Red chili powder 2 tbsp
Turmeric 1 tsp
Flour 2 tbsp
Clarified butter 1 cup
Salt to taste
For Gulzar Special Kunna Masala:
Black cumin 6 tbsp
Mace 1 tbsp
Coriander seeds 8 tbsp
Black peppercorn 2 tbsp
Star anise flower 2
Cloves 1 tbsp
Small cardamom 1 tbsp
Ginger (slice) to garnish
Method For Gulzar Special Kunna Masala:
First put the black cumin, whole coriander, whole black chilies, star anise, cloves, small cardamom roast it nicely.
Now put all the roasted masala in a blender, Kunna masala is ready.
For Making Mutton Kunna: Make the stock of mutton trotters, keep them on a side.Heat the ghee in a pot add onions make them light brown.
Now add ginger garlic paste, add mutton roast it well.
Now add gulzar special masala, chopped red chili, chopped turmeric, roast it for 2 to 3 minutes, then add stock, leave it to cook on low temperature.
When the mutton is tendered then add salt and mix it.
Now add roasted flour water, make the gravy thick, take it out.
Put some whole black cumin, garnish it with ginger slices.
Ingredients For Aloo Aur Badaam Ka Halwa:
Boiled potatoes 1/2 kg
Almonds paste 1 cup
Khoya 250 gm
Small cardamom 4-5
Sugar 1/2 cup
Clarified butter 1 cup
Almonds to garnish
Method:
Make the paste of almonds.
Pour oil in a pan, add green cardamom powder make them crispy.
Then add potatoes, mash them and fry.
Now add sugar, almonds roast it and make its paste.
After that add khoya, mix and cook it well.
Cook it till the halwa leaves ghee.
In the end take out in a dish and garnish it with almonds then serve.
