Arabian Shorba, Arabia Kafta And Rose Bukhari by Chef Gulzar

Ingredients For Rose Bukhari:

  • Rice 500 gm
  • Beef 700 gm
  • Chickpeas 250 gm
  • Onion 1
  • Whole cumin 1 tsp
  • Carrot 2-3
  • Black pepper 1 tsp
  • Garlic 2-3
  • Tomato paste 1/2 cup
  • Crushed cardamom 1/2 tsp
  • Cinnamon 2 sticks
  • Oil 2-3 tbsp
  • Salt to taste

Method:

  1. Pour oil in a pan, heat it and add cinnamon. for making it crispy.
  2. Now add tomatoes, chopped garlic, beef, roast it well.
  3. Then add tomato paste, chopped black pepper, chopped cardamom, salt, whole cumin.
  4. When the mixture becomes dry then pour oil and let it cook.
  5. When the beef is tendered then add stock, add rice.
  6. When the rice is ready, put chickpeas, simmer it.
  7. When it is simmered then add carrot, mix it well then dish out and serve.

Ingredients For Arabia Kafta:

  • Chicken  1/2 kg
  • Bread slice  2-3
  • Onion  1
  • Garlic  4-5
  • Green coriander  1/2 bunch
  • Coriander seeds  1 tsp
  • Cumin seeds  1 tsp
  • Black peppercorns  1 tsp
  • Cinnamon powder  a pinch
  • Yogurt  250 gm
  • Mint leaves  1/2 bunch
  • Oil  4-5 tbsp
  • Salt   to taste
  • Salad leaves, lemon  to garnish

Method:

  1. Pour oil in a pan, add cinnamon sticks, small cardamoms, make it crispy.
  2. Now add mutton, roast it well.
  3. When the mutton is tendered then dry its water, make the paste of onions, add almonds paste, chopped black pepper, white chili, turmeric powder, salt, roast it well.
  4. Now pour water and let it cook on low temperature.
  5. When mutton is tendered then filter it and separate the masala.
  6. Now put that stock and mutton again add yogurt, black peppercorn cook it well so that they all are tendered.
  7. Make its syrup and dish out it.
  8. Put chopped almonds then garnish it, then serve.

  • White beans 250 gm
  • Onion paste 1/2 cup
  • Garlic paste 1 tbsp
  • Almond paste 1/2 cup
  • Black pepper 1 tsp
  • White pepper 1 tsp
  • Turmeric 1/2 tsp
  • Cinnamon 2 sticks
  • Cloves 4-5
  • Small cardamom 4-5
  • Oil 4 tbsp
  • Salt to taste
  • Almonds to garnish
