BBQ Chicken Sandwiches, Kabab, Karak Chai And Chicken Fingers With Mayo Garlic Sauce by Rida Aftab

Ingredients For BBQ Chicken Sandwiches:

  • 4 bread slices
  • 250 grams minced
  • 1 chopped onion
  • 1 tsp ginger garlic paste
  • 50 grams butter
  • 1/2 cup tomato ketchup
  • 1 tbsp vinegar
  • 1 tbsp brown sugar
  • 2 tbsp chili sauce
  • 2 tbsp wooster shier sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp crushed red chili
  • Salad leaves as required
  • 1 tbsp corn flour
  • Water  1/2 cup
  • Oil  4 tbsp
  • Coal  1 piece

Method:

  1. Pour oil in a pan, add chopped onions make them brown.
  2. Now add mince, water, ginger garlic paste, black pepper, salt, cover it on low temperature, cook it for 20 minutes.
  3. After that add tomato ketchup, vinegar, brown sugar, chili sauce, wooster shier sauce, corn flour mix it well, turn off the stove.
  4. Then put the butter on bread slices, fry it lightly.
  5. Now add mince, salad leaves, put another side on its top.
  6. In the end put the chicken pieces on its top, give steam of coals.

Ingredients For Chicken Fingers With Mayo Garlic Sauce:

  • Chicken  1/2 kg
  • Egg  1
  • Chinese salt  1/2 tsp
  • Flour  1/2 cup
  • Corn flour  1/2 cup
  • Chopped red chili  1 tsp
  • Ginger powder  1 tsp 
  • Salt  1/2 tsp
  • Yellow color  1 pinch
  • Roasted cumin  1 tsp
  • Carom seed  1/2 tsp
  • Oil  for frying

For Mayo Garlic Sauce:

  • Mayonnaise 1/2 cup
  • Chopped garlic 1 tbsp
  • Cream  1 tbsp
  • Green chili paste 1 tbsp
  • Salt 1/4 tsp
  • Lemon juice 1 tbsp

Method:

  1. First cut the chicken in long slices, add chopped red chilies, Chinese salt, garlic powder, salt, roasted cumin, carom seeds, pinch of yellow color, leave it for 1 hour.
  2. Now add chicken in beaten eggs, then corn flour, flour coat it well and fry it in oil.
  3. For making mayo garlic sauce, put mayonnaise, garlic cloves, cream, green chili paste, salt, lemon juice, mix it well, serve it with chicken fingers.

Ingredients For Kababs:

  • Boneless chicken  1/2 kg
  • Garlic cloves 4
  • Onion chopped  3
  • Parsley chopped  1/2 bunch
  • Coriander powder 1 tsp
  • All spice powder  1 tsp
  • Crushed red pepper  1 tsp
  • Ginger  1 tsp
  • Salt  1 tsp
  • Cumin seeds  1/2 tsp
  • Black pepper powder  1/2 tsp
  • Egg  1
  • Green chilies  4
  • Oil  as required

Method:

  1. Add garlic in in chicken, add salt, chopped onions, chopped green coriander, chopped cumin, chopped garam masala, chopped chili, ginger, green chilies, chopped red chilies,  mix it well.
  2. Now add egg, make kababs and fry them.

Ingredients For Karak Chai:

  • Water  3 cup
  • Milk  1/2 liter
  • Cardamom  2
  • Tea leaves  3 tsp
  • Sugar  as required
  • Clotted cream as required

Method:

  1. Pour water for boiling.
  2. When it is boiled then add cardamoms, tea leaves, cook it well, boil it for 2 to 3 times.
  3. Now pour milk, sugar, cook it for 10 minutes on low temperature.
  4. Then take out in a pan, add clotted cream then serve.
