Dhaka Chicken, Dhaka Dahi And Dhaka Pairay by Chef Gulzar

Ingredients For Dhaka Chicken:

  • Chicken  1/2 kg
  • Onion paste  1/2 cup
  • Tomato  2
  • Ginger garlic paste  2 tbsp
  • Chili paste  2 tbsp
  • Turmeric paste  1 tsp
  • All spice powder  1 tsp
  • Onion seed  1 tsp
  • Cumin powder  1 tsp
  • Yogurt  1/2 cup
  • Mustard oil  4 tbsp
  • Oil  2 tbsp
  • Salt  to taste
  • Green coriander  for garnish

Method:

  1. Pour olive oil in a pan, add oil, chicken let it cook, now add chili paste, onion paste, chopped garam masala, turmeric paste, tomato, ginger garlic paste, chopped cumin, onion seeds, salt roast it well.
  2. When the masala is roasted then add yogurt, mix it well then cook it on low temperature.
  3. When the dish is ready then dish out it and sprinkle green coriander on its top then serve.

Ingredients For Dhaka Pairay:

  • Fresh paneer  250 gm
  • Khoya  250 gm
  • Condensed milk  1/2 cup
  • Milk powder  1 cup
  • Coconut powder  as required
  • Kewra essence  few drops

Method:

  1. Put coconut in a pan and saute it lightly.
  2. Now add khoya, yeast, crush it with hand.
  3. Then add condensed milk, few drops of kewra essence mix it well.
  4. Now make portions, coat it with dry milk.
  5. Then place it in a fridge.
  6. In the end take it out and place it in serving dish, then serve.

Ingredients For Dhaka Dahi:

  • Milk  1-1/2 kg
  • Yogurt  2 tbsp
  • Food color  1 pinch
  • Kewra essence  few drops
  • Dry fruits  for garnish
  • Clay pot  for setting

Method:

  1. Pour milk, cook it till its color changes, turn off heat when it remains to 1 kg.
  2. Then add milk, cool it on room temperature.
  3. Now add biryani, yogurt, few drops of kewra essence, pinch of food color, mix it well.
  4. Now put that mixture in, fold it with plastic and keep it in dark place.
  5. When it is ready then add almonds and pistachio for garnishing then serve.
