Chicken Pasta Salad, Chicken Curry And Chocolate Orange Squares by Zarnak Sidhwa

Ingredients For Chocolate Orange Squares:

  • Dark chocolate 225 gm
  • Butter 225 gm
  • Eggs 250 gm
  • Caster sugar  1
  • Zest of orange  2 tbsp
  • Flour 150 gm
  • Baking powder 1 tsp

Method:

  1. Melt the butter and chocolate together over a pan of simmering water, set aside.
  2. Mix together the eggs, sugar, zest and juice of orange the n fold in flour and baking powder.
  3. Pour in the butte and chocolate and stir until combined.
  4. Pour into the tin and bake at 180 degree C for 40 minutes.
  5. Cool before cutting into squares.

Ingredients For Chicken Curry:

  • Oil  3 tbsp
  • Cumin seeds  1/2 tsp
  • Mustard seeds 1/2 tsp
  • Onion sliced  1
  • Ginger  2 tsp
  • Garlic  4 cloves
  • Chicken pieces  1 kg
  • Red chili powder  1/2 tsp
  • Red chilies  1 tbsp
  • Curry leaves  15-20
  • Coconut milk  250 ml

Method:

  1. Put the oil into a wide pan pan and set over a medium-high heat.
  2. When the oil is hot, add the cumin and mustard seeds.
  3. As soon as the mustard seeds start to pop (which is almost immediately) add the onion.
  4. Stir fry until they are lightly browned.
  5. Now add the chicken, ginger, garlic, chili powder, crushed red chilies and curry leaves, and stir for a minute.
  6. Add 250 ml water and bring to a simmer, before covering the pan, lowering the heat and leaving for 25 minutes.
  7. Remove the lid and boil down most of the liquid.
  8. Add the coconut milk and stir through the sauce over a medium high heat for a minute or so.

Ingredients For Chicken Pasta Salad:

  • Sesame seeds  1/4 cup
  • Pasta boiled  1 cup
  • Oil  2 tbsp
  • Soya sauce  1/3 cup
  • Sesame oil  1 tsp
  • Caster sugar  3 tbsp
  • Ginger ground  1/2 tsp
  • Black pepper  1/4 tsp
  • Cooked chicken  3 cup
  • Coriander chopped  1/3 cup
  • Green onion  1/3 cup

Method:

  1. Heat a pan and add sesame seeds, and cook stirring frequently until lightly toasted.
  2. Remove from heat, and set aside.
  3. Combine vegetable oil, soya sauce, sesame oil, sugar, sesame seeds, ginger and pepper. Mix well.
  4. Pour sesame dressing over paste, and tos to coat evenly.
  5. Gently mix in chicken, coriander and green onions.
