Ingredients For Daal Mein Koftay:

  • Mince  1/2 kg
  • Chana daal  1/2 cup
  • Cloves  8
  • Green cardamom  4
  • Black cardamom  2
  • Cinnamon  1 stick
  • Cumin crushed  1 1/2 tsp
  • Ginger garlic 1 tbsp
  • Black pepper crushed  1 tsp
  • Salt  1 tsp
  • Onion  1 cup
  • Water  2 cups
  • Chili powder  1 tsp
  • Coriander chopped  1/2 cup
  • Green chilies chopped  4
  • Cream 2 tbsp
  • Egg  1

Ingredients For Bhagar:

  • Ghee  4 tbsp
  • Garlic crushed  1 tbsp
  • Whole red chilies  5
  • Cumin seeds  1 tsp

Ingredients For Daal:

  • Orange lentil  1 1/2 cup
  • Ginger garlic paste  1 tsp
  • Turmeric  1/2 tsp
  • Chili powder  1 1/2 tsp
  • Water  4 cups
  • Salt  1 tsp
  • Lemon juice  1/4 cup

Method:

  1. For Making Kofta: Pour oil in a pan, add mince, chana daal, cloves, green coriander, black coriander, sugar, chopped cumin, chopped ginger garlic, chopped black pepper, salt, chopped onions, water cook it well, until the mince is tendered, becomes dry.
  2. Now make the paste in grinder, add chopped red chilies, chopped coriander, green chilies, cream, egg, mix it make smooth balls.
  3. Then deep fry them in hot oil, keep them on a side.
  4. For Making Daal: Add orange daal, water, ginger garlic paste, turmeric, salt, chopped red chili, boil it, until they are tendered well.
  5. Now cool it and blend it well. Then pour lemon juice, chopped green chilies, green coriander, boil it for 10 minutes.
  6. Then put the fired koftay in daal.
  7. In the end add bhagar, serve it with rice.

Ingredients For Daal Ky Bun Kabab:

  • Chana daal  1 cup
  • Salt  1/2 tsp
  • Chili powder  1/2 tsp
  • White cumin  1/2 tsp
  • Black cumin  1/2 tsp
  • Potatoes boiled  1 cup
  • Buns  4
  • Egg Whites Beaten  2
  • Salad leaves  as required
  • Cucumber slices  as required
  • Tomato slices  as required

Ingredients For Chutney:

  • Mint leaves  1/2 bunch
  • Coriander leaves  1/2 bunch
  • Green chilies  4
  • Tomato  1 small
  • Khatai powder  1/2 tsp
  • Salt  1/2 tsp
  • Garlic  1/2 tsp
  • Yogurt  3 tbsp

Method:

  1. For making chutney: Put mint, green coriander, green chilies, small tomatoes, chopped khatai, salt, garlic, yogurt in a blender, until it becomes smooth.
  2. For making ban kabab: Add chana daal, salt, chopped red chili, white cumin, black cumin, boil it well, until it is tendered and becomes soft.
  3. Now chop the daal and add boiled and chopped potatoes.
  4. Then add kababs, beaten egg white, dip it and shallow fry.
  5. Now cut the bun and heat it in some oil.
  6. Now add chutney, salad leaves, fry it, cucumber slice, tomato slice spread it.
  7. Place another part of bun on its top then serve it hot.

Ingredients For Qubuli:

  • Chana daal  200 gm
  • Rice boiled  1/2 kg
  • Ginger garlic  1 tbsp
  • Oil  1/2 cup
  • Yogurt  1-1/2 cup
  • Chili powder  2 tsp
  • Brown onion  1 cup
  • Lemon juice  2 tbsp
  • Salt  1-1/2 tsp
  • Chili powder  1-1/2 tsp
  • Cinnamon  2
  • Cloves  4
  • Black cardamom  2
  • Green chilies chopped  3
  • Coriander leaves chopped  4 tbsp
  • Black cumin  1/2 tsp

Method:

  1. Boil the lentil, until they are tendered, then place it on a side.
  2. Now pour oil, heat it add fry the lentil for 2 to 3 minutes.
  3. Then add ginger garlic paste, add salt, chopped red chili, beaten sugar, fry it for 15 minutes.
  4. After that add onions, chopped green chilies, chopped green coriander, boiled rice, black cumin, cook it well, until it remains to 3/4th.
  5. Now add boiled half rice, cooked lentil mixture.
  6. Put remaining rice, fried onions, simmer it for 15 minutes.
  7. In the end take it out and serve it hot.
