Pita Bread Chicken, Rusbharay And Mutton Tikka by Chef Zakir

Ingredients For Mutton Tikka:

  • Mutton  1/2 kg
  • Ginger garlic paste  1 tbsp
  • Thick yogurt  125 gm
  • Turmeric  1/2 tsp
  • Chili powder 1 tbsp
  • Cumin powder  1 tsp
  • All spice powder  1/2 tsp
  • Nutmeg mace powder 1/4 tsp
  • Lemon juice  1 tbsp
  • Salt  to taste
  • Oil  3-4 tbsp
  • Papaya paste  3 tbsp
  • Coriander leaves  1/4 bunch
  • Oil  3-4 tbsp

Method:

  1. First cut the mutton in long slices.
  2. Now take a mutton, salt, ginger garlic paste, papaya paste for marination.
  3. Then take out water from it, add yogurt, turmeric, chopped red chili, chopped cumin, chopped garam masala, nutmeg mace, salt, green coriander, lemon juice leave it for half an hour.
  4. Then pour oil add marinated mutton, fry it for 2 to 3 minutes, cover and let it simmer.
  5. Then remove its cover after 10 to 12 minutes, cook it on high temperature, so that the water dries.
  6. Delicious Mutton Tikka is ready.

Ingredients For Rusbharay:

  • Noodles Boiled  1/2 packet
  • Milk  1/2 liter
  • Corn flour  1/4 cup
  • Sugar  125 gm
  • Mix fruit chopped 1 tin
  • Red jelly 1 packet
  • Green jelly  1 packet
  • Almond chopped  25
  • Pistachio chopped  25 gm
  • Fig chopped  50 gm
  • Dry dates chopped  50 gm
  • Raisin  50 gm
  • Fresh cream  200 ml

Method:

  1. First pour milk, heat it.
  2. When the milk becomes hot, then add corn flour make it thick, remove it from stove, stir it.
  3. Put sugar along.
  4. Now add mix it till it is cooled. When it is cooled then add boiled noodles, chopped almonds, chopped pistachio, chopped fig, raisin, chopped mixed fruits, fresh cream, mix it well.
  5. Now add red jelly, green jelly mix it well, cool it in fridge then serve.

Ingredients For Pita Bread Chicken:

  • Chicken breast  1
  • Pita bread  4
  • Mozzarella cheese  1 packet
  • Onion chopped  1 small
  • Capsicum chopped  1
  • Green chilies chopped  3
  • Lemon  1
  • Chili powder  1 tsp
  • Turmeric  1/2 tsp
  • Yogurt  125 gm
  • Salt  to taste
  • Black pepper powder  1/2 tsp
  • Oil  4 tbsp
  • Tomato ketchup  2 tbsp
  • Chili garlic sauce  2 tbsp

Method:

  1. First cut the chicken breast in julienne.
  2. Now put chicken breast, yogurt, chopped red chili, turmeric, salt and marinate it nicely.
  3. Now pour oil add marinated chicken, pour water cook it for 1 to 2 minutes.
  4. Then cover and let it cook for 4 to 5 minutes.
  5. Now heat it high, dry it and keep it on a side.
  6. Now add onion, capsicum, green chilies cut it in thin pieces.
  7. Now add vegetables, salt, chopped black pepper, chopped tomato ketchup, chili garlic sauce, mix it well.
  8. Then add mozzarella cheese, chicken mix it well.
  9. Now take a pita bread, put chicken mixture, spread the chicken mixture.
  10. Then sprinkle some lemon juice.
  11. Now put another bread on it and press it.
  12. Then pour oil, heat it and fry the pita bread from both sides, After that take it out in a platter, cut it and then serve.
