Masalay Daar Daal Maash, Kachori And Daal Makhani by Shireen Anwer

Ingredients For Masalay Daar Daal Mash:

  • Mash ki daal 250 gm
  • Turmeric 1/2 tsp
  • Butter 2 ounce
  • Oil 1/4 cup
  • Onion 1
  • White cumin1/2 tsp
  • Yogurt 1 tbsp
  • Crushed garlic 1 tbsp
  • Tomatoes 2 chopped
  • Green chilies 3 whole
  • Chili powder 1/2 tsp
  • Crushed red pepper 1/2 tsp
  • Salt 1 tsp
  • All spice 1/2 tsp
  • Coriander leaves 2 tbsp
  • Spring onion 1/2 cup

Method:

  1. First add butter, oil, chopped onion for frying, until the they turn to golden brown.
  2. Now add chopped tomatoes, whole green chilies, salt, chopped black pepper, chopped red chili, chopped white cumin, fry it lightly.
  3. Then add yogurt, boiled lentils, water cover and simmer it, until it remain ready.
  4. Now add chopped green onion, chopped garam masala, green coriander and simmer it for 5 minutes.

Ingredients For Daal Makhani:

  • Whole odat daal 1 cup
  • Chana daal 3 tbsp
  • Water 5 cups
  • Ghee 1-1/2 cup
  • Salt 1 tsp
  • Ginger 1 inch piece
  • Garlic 1 tsp
  • Button red chiles 3
  • Tomato 3
  • Yogurt 1/4 cup
  • Cream 1/2 cup
  • Coriander powder 2 tsp
  • All spice 1/2 tsp
  • Butter 1 tbsp
  • Nutmeg grinded 1/4 tsp

Method:

  1. First add red chilies, ginger garlic, grind it and keep it on a side.
  2. Now add whole odat daal, chana daal, ghee, water, salt, chopped paste, boil it until the lentil tenders, then keep it on a side.
  3. Pour oil heat it, add blended tomatoes for frying.
  4. Then add yogurt, ginger garlic paste, chopped garam masala, chopped coriander, fry it for few minutes.
  5. After that add boiled lentils, butter, cook it for 10 to 15 minutes.
  6. In the end add cream, chopped nutmeg mace, remove it from stove.

Ingredients For Kachori:

  • Flour 2 cups
  • Salt 1 tsp
  • Oil 7 tbsp
  • Water 1/2 cup

Ingredients For Filling:

  • Chana ki daal boiled 1 cup
  • Salt 1/2 tsp
  • Crushed red pepper1 tsp

Method:

  1. Boil the chanay ki daal, until it tenders.
  2. Now add salt, chopped black pepper in a grinder and mix it.
  3. For making kachori add salt, oil and water.
  4. Now add flour mix it, knead the smooth dough.
  5. Then pour oil and knead it, until it will become smooth.
  6. Now add all pieces. Then give the shape of ball, leave it for 15 minutes.
  7. Then take a ball in a hand then spread it, and add half spoon filing.
  8. Then pour oil on the kachori and spread it to the saucer size.
  9. In the end deep fry it on medium temperature, so that it turns to golden brown.
